How To make Glazed Cranberry Coffeecake
Coffeecake: 1 c Sugar
1/2 c Butter; softened
2 Eggs
2 c All-purpose flour
1 ts Baking powder
1 ts Baking soda
1/2 ts Salt
1 c Nonfat sour cream
1 tb Orange juice
2 ts Orange peel; grated
16 oz Cranberry sauce; whole berri
Glaze: 1 c Powdered sugar
1 tb Nonfat sour cream
4 tb Orange juice
Sugared cranberries; for gar Mint leaves; for garnish Recipe by: Land O Lakes Eating Right, Eating Light Preheat oven to 350 degrees. Grease and flour a 12-cup Bundt pan. In a large bowl, beat sugar and butter at medium speed, scraping bowl often, until well mixed. Add eggs; continue beating, scraping bowl often, until well mixed. Continue beating, adding flour, baking powder, baking soda and salt alternately with sour cream, scraping bowl often, until well mixed. By hand, stir in orange juice and orange peel. Spoon 1/3 of the batter into prepared pan. Spread 1/3 of the cranberry sauce on top. Repeat layers twice, ending with cranberry sauce. Bake for 60 to 70 minutes (check after 50 minutes), or until a toothpick inserted in the center comes out clean.
Cool for 10 minutes; remove from pan. Cool completely. In a medium bowl, stir together powdered sugar, sour cream and orange juice. Drizzle over cooled coffeecake and garnish with sugared cranberries and mint leaves. To make sugared cranberries, stir together 2 tablespoons water and 1 tablespoon corn syrup in a small bowl. Dip cranberries in water mixture then roll in sugar. Place on waxed paper and refrigerate for at least one hour before using. -----

Cranberry Orange Coffee Cake with Pecans and Orange Glaze
Here’s a seasonal riff on my Ultimate Coffee Cake -- presenting Cranberry Orange Coffee Cake with pecans and an orange glaze! Think of it as cranberry lovers coffee cake. The tart fresh cranberries pair perfectly with fresh taste of orange. Not only did we use every bit of the zest from a good sized orange, we used the fresh juice for the glaze. Naturally I always find ways to add nuts to my recipes, and this time I used pecans. Feel free to use walnuts for an equally delicious coffee cake. This recipe is simply out of this world, and I know you’ll love this coffee cake. We have a short window of time to buy fresh cranberries, so buy them now and freeze them to have them available for baking all winter long. This Cranberry Orange delight is too good not to enjoy all year long.
Ingredients
Cake Batter
• 1 stick butter at room temperature
• ½ cup white sugar
• ½ cup brown sugar
• 3 large eggs at room temperature
• 3 tsp baking powder
• 1 tsp baking soda
• 2 ½ cups flour
• 1 ½ tsp vanilla
• 1 tsp cinnamon
• ¼ tsp ginger
• 12 oz fresh cranberries
• 1 medium to large orange zested (reserve orange for glaze)
• 1 cup sour cream or plain Greek yogurt
• 1 cup powdered sugar
• 1 tsp kosher salt
• 1 cup coarsely chopped pecans (more if desired or omit from recipe)
Instructions
• Preheat oven to 350F
• Prepare a 9” spring form pan and set aside.
• Combine dry ingredients including flour, baking powder, baking soda, salt, cinnamon, ginger and set aside.
• Beat butter and sugar until light and fluffy.
• Add eggs one at a time and mix. Scrape bowl with a spatula as needed.
• Add vanilla and orange zest and mix.
• Add sour cream or Greek yogurt and mix until well combined.
• Add dry ingredients and mix until just combined. Batter will be thick.
• Add cranberries and pecans and fold into batter.
• Add batter to 9” spring form pan and smooth top.
• Add additional chopped pecans on top of batter if desired.
• Bake 55-65 minutes until tester comes out dry. The baking time will vary based on your oven so check periodically. Do not over bake!
• Cool before removing from pan.
To Make Orange Glaze:
• Juice the zested orange.
• Add 2 tablespoons of orange juice to the cup of powdered sugar and whisk to combine. Add more juice as needed until glaze is the consistency you desire.
• Use whisk to spread glaze over coffee cake.

Spiced Cranberry Coffee Cake
Spiced Cranberries:
4 cups fresh or frozen cranberries
2 cups water
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon orange zest
Coffee Cake:
3 cups all-purpose flour, plus more for coating baking dish
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 1/2 sticks unsalted butter, plus more for greasing baking dish
1 1/2 cups granulated sugar
1 1/2 cups low-fat buttermilk
3 large eggs
2 teaspoons orange zest
2 cups spiced cranberries, divided
1 cup walnuts, roughly chopped
Icing:
1 1/4 cups confectioners sugar
3 tablespoons milk
For Spiced Cranberries:
1.Combine all the ingredients in a large saucepan over medium high heat. Bring to a boil and cook until the cranberries just begin to burst. Reduce to a simmer and continue to cook cranberries 30 more minutes, until the sauce is rich and thick. Remove from heat and let cool.
For Coffee Cake:
1.Preheat oven to 350F.
2.Coat a 9x13 inch baking dish with butter and dust with flour.
3.In a medium bowl whisk together the flour, baking powder, baking soda and salt.
4.Using an electric mixer fitted with the paddle attachment beat the butter and sugar until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl to combine everything.
5. In a medium bowl whisk together the buttermilk, eggs and orange zest until combined.
6.Add the dry ingredients into the butter and sugar mixture and beat on low speed. Slowly add in the buttermilk mixture until the batter just comes together.
7.Evenly pour and spread half of the batter into the prepared baking dish, scatter half of the spiced cranberries over top. Add the remaining batter over the cranberries, evenly smoothing the top with a rubber spatula and repeat with remaining spiced cranberries on top. Sprinkle walnuts all over the top of cake.
8.Bake until the cake is golden brown and a toothpick inserted into the center comes out clean, 45 to 50 minutes. Let cool for 5 minutes.
For Icing:
1.Whisk together the confectioners sugar and milk until smooth. Drizzle the icing over the warm cake. Serve warm or at room temperature.
