How To make Gram's Lighter Applesauce Fruitcake
1 c Butter; room temperature
2 c Sugar
2 Eggs; room temperature
2 ts Vanilla
2 c Pitted dates; chopped coarse
3 c Applesauce
2 c Walnuts; chopped coarse
2 c Raisins
2 c Mixed candied fruit; chopped
-coarse 1/2 ts Salt
1 ts Ground cinnamon
1/2 ts Ground cloves
1 tb Baking soda
4 c All-purpose flour
Cream butter and sugar. Beat in eggs, one at a time. Add vanilla. Add remaining ingredients and blend until all is incorporated. Divide batter among 3 greased loaf pans, about 8 x 4 x 3-inches each. Bake in a preheated 350-degree oven for 1 hour and 15 minutes, or until a toothpick comes out
clean. Remove to a cooling rack. When cool enough to handle, remove the loaves from the pans and cool completely on a rack. Wrap in plastic wrap and keep in refrigerator. The Tampa Tribune, December 1992. -----

INGREDIENTS IN THIS DISH:
500g of Mixed Dried Fruit
1/2 Cup of Brandy (or similar liquor or orange juice)
150g of Butter
1/2 Cup of Brown Sugar
2 Eggs
1 1/2 Teaspoons of Mixed Spice
1 Teaspoon of Vanilla Extract
1/2 Cup of Cranberry Sauce (or Apple Sauce)
1/2 Cup of Plain Flour
1 1/2 Cups of Fresh Breadcrumbs
NOTE: You can make the pudding up to 1 day ahead. To reheat, turn pudding out onto a plate and microwave uncovered for 10 minutes on 30% power until warmed through.
Preparation Time: About 15 minutes
Cooking Time: About 45 minutes
SERVES 8

Solo Overnight In The Thatched Reed Winter Survival Shelter During Snowstorm (87 Days episode 25)
With a Snow Storm on the way, I thought it was a perfect time to do a Solo Overnighter. So I prepared to go spend the night in my Thatched reed winter survival shelter. I packed up my gear and loaded it all into the sled and hiked out to the shelter. The storm dumped over a foot of snow in places but I was warm and cozy in the thatched reed hut. So much for survival, I sat by the fire and whittled all night and got a good night sleep on my reed sleeping mat. I cooked and egg in the ashes and coals and roasted an apple for dinner . The next day I woke up my sleeping fire that I was able to keep going throughout the night, Using my Fire banking method. This made it easy to get a fire started before even getting out of bed. Once I got up I made some coffee and stir-fry from Thrive life. They make freeze-dried meals for dinners at home but work great for camping. The weather outside might be frightful but inside my thatched reed winter survival shelter It's quite delightful!!!
I do not recommend Survival frogs machete after further use. I found it was impossible to cut anything over 3/4 of an inch. Survival Frog products are like getting the Pu Pu platter at the Chinese restaurant. Some of the stuff is really tasty but every so often you just get a rat on a stick.
