How To make Grandma Stefan's German Cheese Torte
2/3 Pound Graham Crackers
Crushed
1/2 Cup Sugar
1 1/2 Teaspoons Cinnamon,Ground
6 Tablespoons Margarine :
Melted
-FILLING 4 Eggs,Large
1 Cup Sugar
2 Pounds Ricotta Cheese*
1/2 Pint Whipping Cream
1/4 Teaspoon Salt
1 Teaspoon Vanilla Extract
2 Tablespoons Flour
*Use Baker's style cottage cheese instead of ricotta if preferred. Crust: mix all crust ingredients and line the bottom and sides of a spring form pan, saving 1 cup mixture for topping. The recipe calls for 4-6 tablespoons melted margarine. You may not need the full amount to make a proper crust. Filling: Beat together the eggs and sugar. Add cheese and rest of ingredients; mix well. Pour carefully into lined pans. Top with remaining crumb topping. Bake in preheated 350 degree oven for 1 hour or until firm. Traditional German Käsekuchen (cheesecake)
Delicious German Cheesecake with curd (Quark) :)
Ingredients:
[for the shortcrust]
- 250g flour
- 125g butter
- a pinch of salt
- 30g sugar (but you can also use 60g if you prefer a sweeter cake)
- 1 egg yolk
- 2 tbsp water
[for the cream]
- seeds of 1 vanilla bean
- 750g curd (Quark)
- 4 tbsp vegetable oil
- 200g sugar
- 3 egg yolks
- 3 egg whites
- 40g starch

Instructions:

Step 1: cream the butter in a large bowl
Step 2: add sugar and salt and mix until creamy
Step 3: seperate one egg and add the yolk to the butter mixture and mix well. If your eggs are small you can use the remaining egg white for the cream aswell (4 instead of 3 then). Or make macarons ;)
Step 4: sift in the flour little by little and mix well. Add the water after you added 2/3rd of the flour. If it is too difficult to mix by hand, use an electric mixer.
Step 5: kneat the dough and form it into a ball. Wrap it and chill for at least 1 hour.
[cream]
Step 1: cut the vanilla bean and scratch out the seeds. Add them to the sugar.
Step 2: seperate 3 eggs and beat the egg whites until stiff peaks form.
Step 3: transfer the curd into a large bowl and smooth it.
Step 4: add sugar and vanilla seeds and mix.
Step 5: beat the egg yolks in a seperate bowl, add to the cream mixture and mix.
Step 6: add the oil, sift in the starch and mix.
Step 7: fold in the egg whites.

Step 8: grease a spring form with butter/oil and flour it lightly.
Step 9: place the dpugh between two layers of plastic wrap and roll it out to fit in the pan.
Step 10: Lay the pan with the dough (bottom & sides).
Step 11: dig the dough a few times with a fork.
Step 12: fill in the cream and drop lightly to remove the air inside.
Step 13: bake for 50-60minutes at 180°C. Do NOT OPEN while baking!
