Traditional Spaghetti with Greek Meat Sauce Recipe. Makaronia Me Kima.
INGREDIENTS LIST
* 2 lbs. lean ground beef
* 2 onions
* 4 garlic cloves
* 1/4 cup Greek extra virgin olive oil
* 2 tsp. ground cinnamon
* 2 whole cloves
* 2 - 28oz cans crushed tomatoes
* 2 tbsp. tomato paste
* 2 - 900g spaghetti pkgs.
* Mizithra cheese or parmesan to taste
* Salt & pepper to taste

Chicken Kapama: Greek Style Braised Chicken in a Tomato Sauce

Chicken Kapama: Braised Cinnamon Chicken
Serves 4-5:
1 chicken, 3-4 pounds
1 teaspoon ground cinnamon
Salt and pepper to taste
1/3 cup olive oil
1 large onion, finely chopped
3 garlic cloves, grated
2 cinnamon sticks
28 ounces canned tomatoes, unflavored and pureed
2 tablespoons tomato paste
½ to 1 teaspoon granulated sugar
1 teaspoon dried oregano
Pinch of crushed red pepper flakes, optional
2-4 tablespoons chopped fresh parsley
1-pound pasta, cooked al dente
½ cup grated Parmesan or Kefalotyri cheese, for serving
Directions
Cut the chicken into about 10 pieces. Wash and pat dry. Season both sides with cinnamon, salt and black pepper.
Heat the olive oil over medium-high heat in a pot and brown the chicken (in 2-3 batches) about 4 minutes on each side. Set the chicken aside.
Reduce the temperature to low and add the chopped onions to the pot. Cook for about 10 minutes or until very soft. Add the grated garlic and stir just until heated through.
Add the chicken with all of its juices back into the pot along with the pureed tomatoes, tomato paste, cinnamon sticks, salt, pepper, oregano, and sugar. Mix to combine.
Bring to a boil and immediately reduce to a simmer. Cover the pot with the lid and simmer for one hour.
Remove the lid and increase the heat to medium. Cook uncovered for an additional 30 minutes so that the sauce thickens. Taste the sauce and add more salt (and sugar if acidic) if needed.
Garnish with chopped parsley and serve over pasta and grated cheese.

So many of you asked me for this recipe on how to cook beef and make it fork tender, so that your kids can eat it as well. This is my Mom’s beloved recipe for the classic, Greek succulent Beef in a rich tomato sauce which is also a staple in my home.
This dish is made with just a few ingredients that you usually have at home. It can accompany either pasta, potatoes or rice. Check a couple of tips that my Mom taught me in this recipe, to succeed 100%, like me!
INGREDIENTS:
1 kg / 2.25 lb boneless Beef
350 gr/ 12 oz Tomato Sauce thick (can)
2-3 Garlic Cloves, chopped
30-45 ml / 2-3 tbsp. Olive Oil
1 tsp. Ground Cinnamon
1 tsp. Paprika powder
1 tsp. Sugar
About 1 lt. / 4 cups Water
Salt and Ground Pepper

Αυτό το πιάτο ετοιμάζεται με λίγα υλικά που συνήθως έχετε στο σπίτι. Μπορεί να συνοδεύσει ζυμαρικά, πατάτες ή ρύζι. Δείτε μερικές συμβουλές που μου δίδαξε η μαμά μου σε αυτήν τη συνταγή, για να το πετύχετε 100%, όπως κι εγώ!
ΥΛΙΚΑ:

2-3 σκελίδες Σκόρδο, ψιλοκομμένες
30-45 ml / 2-3 κ.σ. Ελαιόλαδο
1 κ.γ. Κανέλα σκόνη
1 κ.γ. Πάπρικα σκόνη
1 κ.γ. Ζάχαρη
Περίπου 1 λίτρο / 4 φλιτζάνια Νερό
