✴️ Ingredients
1 cup all purpose flour
1 teaspoon baking powder
1/2 tablespoon sugar
1/2 teaspoon salt
1 large egg
3/4 cup milk
1/4 teaspoon vanilla extract
1 tablespoon butter , melted
1 teaspoon butter for the pan
✴️ Instructions
1) In a large bowl, whisk together the flour, baking powder, sugar and salt.
2) In another bowl, beat the egg and then whisk in the milk, vanilla and melted butter.
3) Pour the wet ingredients into the dry ingredients and mix until just incorporated. If the batter seems too thick, add more of the milk, a little at a time.
4) Melt the butter in a large skillet or griddle over medium heat.
5) Ladle about 3/4 cup of the batter onto the skillet to make a pancake.
6) Cook until bubbles break the surface of the pancake, and the underside is golden brown, about 3 minutes.
7) Flip with a spatula and cook about 1 minute more on the second side. Remove from the pan and place on a plate.
8) Repeat until all the batter is used up.
9) Serve with your favorite toppings: butter, syrup, fruit or any other topping you desire.
✴️ Notes
➡️ How To Measure Flour
Flour measurements can be a huge variable when it comes to baking. Weighing ingredients is by far the most accurate, but it isn’t done much in the U.S. If you use measuring cups to measure, use this method of measuring the flour:
A) Use a spoon to fluff the flour in the container.
B) Use a spoon to scoop the flour into the measuring cup.
c) Use a knife or other straight edged utensil to level the flour across the measuring cup.

RECIPE
1 cup rolled oats
3/4 cup liquid egg whites
1 cup low-fat cottage cheese
2 teaspoons baking powder
2 tsp cinnamon
1 tsp vanilla extract (*optional)
Combine rolled oats, cottage cheese, egg whites, baking powder, cinnamon, and vanilla in a blender.
Blend until everything is well combined (about 30 seconds). You may need to stop to scrape the sides down – you want to have a nice smooth pancake batter-like consistency.
Preheat a non-stick pan or griddle over medium heat and lightly coat with cooking spray. Scoop 1/4 cup of the batter onto the hot pan. Repeat, adding as many pancakes as you can without crowding the pan. Cook for about three minutes or until the edges start to bubble. Flip the pancakes and cook for another two minutes or until golden brown.
Top with fresh berries and a drizzle of maple syrup – or a schmear of nut butter!
