Honey & Whole Wheat Waffles No. 2466 Yields 8 Servings 1/4 Cup Butter 2 Cups Milk 1 Cup All Purpose Flour 1/4 Cup Honey 1 Cup Whole Wheat Flour 3 Large Eggs, Separated, At 2 tsp Baking Powder Room Temperature 2 tsp Sugar 1/2 tsp Salt Preheat the waffle iron. Melt the butter in a (1 Qt.) saucepan over low heat. Set aside to cool. Combine both flours, the baking powder, salt and and sugar in a medium size bowl. Combine the milk and honey. Beat the combination into the melted butter. Beat the egg yolks into the butter mixture. Stir the butter mixture into the flour mixture just until the dry ingredients are moistened. Use an electric mixer to beat the egg whites until stiff peaks form. Fold the egg whites into the batter just until blended. Ladle sufficient batter onto the waffle iron to cover 2/3 of the grid. Use a spatula to spread the batter to the edges. Close the lid. Cook until the steaming stops (about 5 minutes). Use a fork to remove the waffle from the grid. Continue with the remaining batter.

I finally finished my whole grain waffles post and here is a result. Crispy, delicious waffles. I made them with whole wheat flour, a bit of honey, and stevia, so you can enjoy them at breakfast with no remorse. I love to add a little bit of greek yogurt and seasonal fruits on top. Of course, finished with maple syrup - it is a must!
Ingredients: 3 large eggs pinch of salt (maximum 2 g) 0.75 - up to 1 tsp of liquid stevia 1 tsp of vanilla extract 1.5 cup of whole milk (or plant-based milk) 2 tbsp (30g) of unsalted butter (coconut oil will work too) 0.25 tsp of baking powder 0.2 tsp of baking soda 0.5 tsp of cinnamon 2 cups of whole wheat flour 1/4 cup o yellow corn flour (not starch)
*Optional toppings: 0.5 cup of plain greek yogurt + few drops of stevia seasonal berries - I used strawberries this time maple syrup
