2 1/4 c Unbleached flour 1 ts Baking powder 1/2 ts Baking soda 1/4 ts Salt 2/3 c Sugar 3 lg Eggs 3 tb Honey 1/2 ts Vanilla 2 tb Minced zest from 1 orange 1 tb Dried lavender blossoms; opt Sift first 4 ingr. together in small bowl. Whisk sugar and eggs in a large bowl to a light lemon color; stir in next 3 or 4 ingr. Sift dry ingr. over egg mixture. Then fold in until dough is just combined. Follow steps 3 and 4 in Lemon-Anise Biscotti. I made some with chocolate chips and pecans and they went over well. I'll post that recipe later. -----

Does anyone else enjoy lavender in their baked goods? ????♀️ I finally stumbled upon some culinary lavender at my local Sprouts. This buttery honey lavender shortbread cookie recipe is short and sweet. The hardest part is waiting for the dough to chill.
Yields: 16 cookies
1 cup butter, softened 1/2 cup sugar 3 tablespoons honey 2 cups flour 1/4 teaspoon of salt 1/2 a teaspoon or 1 teaspoon culinary lavender (based on your preference of how strong you want the lavender flavor to be)
In a large bowl, cream together the butter, sugar, and honey until light and fluffy.
Sift in the flour, salt, and lavender and mix until combined.
Place one sheet of plastic wrap or parchment on the counter. Using the wrap, shape the dough into a log that is approximately 1 1/4 inches in diameter. Shape the log into a square if desired.
Freeze thirty minutes or refrigerate 1 hour, or until firm.
Preheat the oven to 325 F. Remove the dough from the fridge or freezer and slice into 1/4 inch slices. Place 1 inch apart on a lightly greased or parchment lined baking sheet. Bake 12-14 minutes, or until light golden brown.
Let cookies cool completely before serving.
