How To make Hummus 1
31 oz (2 cns) Chick Peas
Liquid * 6 tb Tahini **
1/3 c Lemon Juice or To Taste
3 Large Cloves Garlic(or More)
Salt & Fresh Ground Pepper
GARINISHES:
Olive Oil Paprika Fresh Chopped Parsley * Liquid shoud be 1/4 of the liquid from 1 can of chick peas. ** Tahini is (seame seed paste) is available in Milddle Eastern Food Shops and many of the larger supermarkets featuring Ethnic Foods. ~------------------------------------------------------------------------- Combine all ingredients, except garinshes, in blender or food processor container. Blend to a smooth, creamy paste. Taste and add mor lemon juice or salt to suit your taste. It should be the creamy consistency of mashed potatoes. Thin with chick pea liquid or water if necessary. Scrape into an attractive bowl, Color olive oil with a bit of paprika. Drizzle oil over the surface in a decorative pattern and sprinkle with parsley. Serve with wedges of pita bread and raw vegetables.

3 Easy Oil Free Hummus Recipes | Classic, Roasted Red Pepper, Roasted Beet
Today I share with you 3 amazing hummus recipes along with a trick that will make your hummus as smooth as store bought. I make a roasted red pepper hummus, a roasted beet root hummus and of course a classic garlic hummus. Making oil free hummus isn't impossible, but it does take some extra effort and in this video I show you exactly how!
Recipe:
1 can of Chickpeas (approx. 1 cup of cooked chickpeas)
1 tbsp baking soda
2 cloves of garlic
2-3 tbsp aqua faba
1 tbsp tahini
1/2 Lemon (juice)
1/2 tsp cumin
1/2 tsp onion powder
1/4 tsp paprika
1/2 tsp pepper
1/4 tsp salt
(Optional 1.5 Roasted Red Pepper or 1 Roasted beet)
Method:
Drain the chickpeas while keeping the liquid (Aquafaba).
Bring a pot of water to boil, add 1 tbsp of baking soda and the can of drained chickpeas.
Simmer for 10 minutes.
Remove and discard the shells from chickpeas (*Watch video for technique)
Add the chickpeas along with all the other ingredients into a food processor or capable blender.
Add 1/3 tbsp of aquafaba as it blends until desired consistency is reached.

Recipe in English:
Ingredients:
Tahini paste:
• Sesame seeds 1 cup
• Olive oil ¼ cup
Hummus:
• Tahini paste (already prepared)
• Chickpeas boiled 2 & ½ cups
• Olive oil ½ cup
• Garlic cloves chopped 4-5
• Lemon juice 2-3 tbs
• Salt 1 tsp or to taste
• Water 1-2 tbs
Garnish:
• Olive oil 1 tsp
• Paprika ½ tsp
• Olive 1-2
Directions:
To prepare Tahini paste, toast sesame seed in a dry pan for 3-4 min on a low flame until seeds are fragrant and change color (don’t over toast them to brown) we need very light brown color.
Add toasted seed in a blender and add ¼ cup olive and blend well until it becomes a creamy paste. ½ cup of Tahini paste is ready which you can keep in refrigerator in an airtight jar for a month.
To prepare hummus, in tahini paste add hummus ingredients gradually and blend.
Blend well and scrap side in between and again blend. Keep repeating until it is creamy and well mixed. Hummus is ready. Add water according to your desired consistency. We added 2 tablespoons of water.
Now dish out hummus, make well with a spoon and drizzle olive oil and paprika. Add 1-2 black or green olive for garnish.
You can refrigerate hummus in an airtight container for up to a week.

• Zaiton ka tel ¼ cup
Hummus:
• Tahini paste (already prepared)
• Chole boiled 2 & ½ cups
• Zaiton ka tel ½ cup
• Lehsan ke jawe chopped 4-5
• Lemon juice 2-3 tbs
• Namak 1 tsp or to taste
• Pani 1-2 tbs
Garnish:
• Olive oil 1 tsp
• Paprika ½ tsp
• Zaiton (Sabut) 1-2
Directions:
Tahini paste tayar karne keliye, 1 cup til ko pan main halki aanch toast kar lain 3-4 min jab tak ke un se khushboo aane lage aur color halka sa brown hojaye. Buht ziada toast nahi karna hai.
Toast kiye hue till blender main shamil karain aur ¼ cup zaitoon ka tel shamil Karen aur tab tak blend karain jab tak creamy paste na ban jaye. ½ ya us se thori ziada tahini paste tayar hai. Aap tahini paste ko 1 month tak air tight container main fridge main rakh sakte hain.
Hummus banane keliye, tayar shuda tahini paste main hummus ke ajza eke k karke shamil Karen aur blend Karen.
Blend karne ke doraan sides ko rubber spatula se scrap karte rahen aur blend Karen jab tak ke har ajza sahi se mix ho kar ek creamy paste ban jaye. Pani apni marzi ke hisab se shamil Karen. Is recipe main humne 2 tablespoon pani shamil kia hai. Namak bhi apne taste ke hisaab se shamil Karen.
Ab tayar hummus ko bowl main nikalen, chamach ki madad se phela kar beech main jaga banaye aur thora sa olive oil aur paprika chirak den.
Hummus ko air tight container main fridge main ek hafte tak rakha jasakta hai.

HUMMUS
Ingredients:
400 gr canned chickpeas (~14 oz, ~0.9 lb)
6 tablespoons tahini
1 lemon
6 cubes of ice
2 garlic cloves
2 tablespoons extra virgin olive oil
Half teaspoon salt
to garnish:
ground sumac
ground cumin
2-3 tablespoons extra virgin olive oil
Parsley
Directions:
- For a perfectly smooth hummus first you need to peel the chickpeas. Add 400 gr
canned chickpeas in a large bowl and rub to take the skin of.
- Fill the bowl with water and skins will start to float. When you drain, skins will group
on water and it will be much easier to collect.
- Add peeled chickpeas, 2 cloves of garlic, half of a teaspoon salt, 6 tablespoons of
tahini and 2 tablespoons of extra virgin olive oil to food processor.
- Squeeze a lemon juice and run for 7-8 minutes on low-medium speed.
- While the food processor is working the hummus will get warm. To avoid that add 6
cubes of ice gradually. ıce will help to make a smooth hummus as well.
- After a couple of minutes hummus will be ok but not smooth enough. Don’t give
up and continue until the hummus is creamy. You can run on high speed at this stage.
- Taste and adjust the lemon, tahini and salt to your taste. Garlic and olive oil always
need time to settle. If you have 2-3 hours before eating the taste will be better.
- When the hummus is ready put on serving table and make a little crater with the
back of a spoon.
- Sprinkle ground sumac, cumin and parsley leaves. Last but not least pour 2-3
tablespoons of extra virgin olive oil.
- Enjoy your creamy, tasty, simple hummus with your lavash or chips as your spoon!
