Indonesian Crab Curry
It's crab season now in Norway and today i'm going to make indonesian crab curry.
It's super simple to make and tasted fenomenal.
I hope everyone enjoy it.
Ingredients :
5 whole cooked Dungeness crab
400 ml coconut cream
5 tbs cooking oil
salt
white pepper
sugar
4 kaffir lime leaves
blend until smooth :
12 cloves shallots
8 cloves garlic
3 cm ginger
2 cm turmeric fresh or 1tbs powder
2 tbs coriander seeds
6 candle nut (optional)
3 red chili or depending on your taste
3 bird eye chili or depending on your taste
200 ml water

Bahan-bahan:
5 ekor kepiting (aku pakai kepiting yang sudah di rebus terlebih
dahulu)
4 lembar daun jeruk
400 ml santan kental
Minyak untuk menumis
Garam sesuai selera
Merica bubuk sesuai selera
Gula pasir sesuai selera
Bumbu yang di haluskan:
12 siung bawang merah
8 siung bawang putih
3cm jahe
2cm kunyit
2 sdm ketumbar
6 butir kemiri
3 buah cabe rawit
3 buah cabe merah besar
sedikit air

Michelin-Starred Singaporean Chili Crab - How To
Michelin-Starred chef Salil Mehta of NYC’s Laut Singapura makes the flavor-packed national dish of Singapore: chili crab. The dish, known for its combination of sweet, spicy, and sour flavors, starts with aromatic shallot, ginger, and garlic. Next, the aromatics are blended with fresh and rehydrated dried chilis and fermented soy beans, creating a rempah (spice paste). Then, Salil breaks down the crab, heats belachan (fermented shrimp paste) in a pan, incorporates the rempah and tomato sauce, and slow cooks the mixture in oil. Salil then adds in sweet chili sauce and adds in the crab, allowing time for the sauce to soak into the shells.
While the crab cooks, Salil prepares steamed buns and a garnish of scallions and cilantro. Salil finishes the dish by removing the crab from the sauce and adding into it a cracked egg to create a velvety texture. Finally, the crab is assembled on a plate, topped with the spicy sauce, garnished with scallion and cilantro, and served with steamed buns. Chef Salil’s vast knowledge of Chinese, Indian, and Malaysian food brings depth and nuance to this classic dish.

For the CHILI CRAB RECIPE, we will need:
1 Doz. Blue Crabs cleaned and cut in half
6 fresh chilli peppers (can use less or more)
3 pc sweet peppers or 3 Big cayenne (or serrano) chillies (Optional but it will make more sauce and less spicy)
1 inch ginger
½ medium onion or 4 shallot(s) and set aside the other half
5 garlic clove(s) (I love Garlic! )
1-2 tbsp Oysters Sauce
1/2 Cup tomato ketchup
1 Tbsp Worcestershire sauce
1 tsp salt to taste
1 Tsp sugar
4 Oz Butter
1 ½ cups chicken stock or 1 Tsp Chicken Powder
Ands Optional 1-2 Candle Nut
HOW TO PREPARE AND COOK LIVE CRABS:
If using live crabs - prepare them by putting them into ice water to make them sleepy, This is a lot less painless for the crabs, and easy to handle and it will stop them nipping your fingers.
Then using a sharp knife, dispatch the crab quickly by cutting through the head. Grab a butter knife and remove the crab shell, by pulling up on the body of the crab.
Then pull off the head and clear out the cavity under running water. Remove the gills, flip over and remove the tail flap.
Wash thoroughly and divide into 2 parts.
Set aside.
Meanwhile prepare a pot with a little water and bring to boil to steam the crabs (Steam the crabs 5-10 minutes until the crabs become orange).
This is the way to do it so you don’t get a runny sauce.
Remove the crabs to drain and keep some of this juice for later.
Heat oil in a wok over medium heat, then add the chili paste and cook for about five minutes, stirring occasionally.
Add the butter then salt, sugar, chicken powder, oyster sauce, Worcestershire sauce, and tomato ketchup.
Mix well and add the crab pieces into the wok
Mix them with the sauce and stir until they are fully coated.
Then add a little of the crab juice from the steaming and toss in the other half onion, give the sauce a quick stir (The sauce should be thick and not too runny - if too thick add some more crab juice).
