How To make Irish Soda Bread1
3 1/2 c Flour
1/2 ts Sugar
1/2 ts Salt
1/2 ts Bicarbonate of soda
1 1/4 c Buttermilk: to 2 1/2 c *
* You will need somewhere between these two amounts of buttermilk, depending on how much liquid your flour tends to absorb. Try to avoid using regular milk: if you must, use baking powder instead of bicarbonate of soda. -- Lightly grease a heavy skillet (if making "soda farl", the flat version of soda bread) or preheat the oven to 450 F (if making "soda cake", the round, more breadlike version.) Sift the dry ingredients together into a large bowl; make sure the soda is evenly distributed. Make a well in the center of the dry mixture and add about half the buttermilk. Stir until you have a raggy dough that is very squashy but which looks more or less dry. Add more liquid sparingly until you achieve this texture. Blend until all the flour has achieved this consistency; then turn out immediately onto a lightly floured board and knead ***for no more than a minute or a minute and a half***. Overkneading makes this bread very tough, and it's very easy to overdo it. If making soda cake, shape the dough into a circle about 8-9 inches across and about an inch and a half thick. Cut a cross about on the top, about half an inch deep, and place on a floured baking sheet. Bake at 450 F for 45-50 minutes. If making soda farl, shape the dough into a circle about 9 inches by one inch thick and cut into four wedges or "farls": place in the preheated skillet, with cut edges about half an inch apart. Cook slowly on the stovetop over low-to-medium heat: it should take about 20 minutes for the farls to puff up and turn a light brown on the pan side. Turn them and cook for another 20 minutes.
For a softer crust on either soda cake or soda farl, wrap in a dishtowel after baking. :

Ingredient
1 cup bread flour
1½ cups all purpose flour, plus more for dusting
1 tbsp baking soda
1 tbsp baking powder
½ tsp salt
3 tbsp granulated sugar
½ cup unsalted butter, cubed
1½ cups raisins
¾ cup milk
3 tbsp apple cider vinegar
Cooking spray
To serve:
Spreads of your choice (butter, margarine, jams, or compotes)

Cranberry & Orange Irish Soda Bread
If a scone and a loaf of bread had a baby, you'd end up with Irish Soda Bread. I know most fruit filled soda breads are filled with dried currents, but cranberries have such a lovely sweet/sour/punch flavor and I knew it would marry beautifully with some zesty orange.
This is an easy rustic treat you can make in under and hour, so let's get started.
Ingredients:
1.5 cups AP flour - divided
2 TBS sugar
1 tsp baking soda
1/2 tsp kosher salt
2 TBS cold unslated butter - cubed
1/4 dried cranberries
2 TBS orange liquer or OJ
1 egg
1/3 cup buttermilk (or 1/3 cup whole milk + 2 TBS vinegar or lemon)
zest of two oranges
1TBS flour to sprinkle on cranberries
extra flour for dusting
oven temp 350 F
Equipment:
measuring cups and spoons
mixing bowl
spatula or wooden spoon
parchment paper
zester or microplane
cast iron or baking sheet

This is such a quick, easy bread that’s perfect for breakfast with your coffee. Make Irish coffee. Or Tennessee coffee, which is like Irish coffee, but with no coffee. It’s just a mug full of whiskey. Yum.

Soda Bread:
- 1 2/3 cup cold buttermilk
- 1 whole egg
- 480g all purpose flour
- 9g kosher salt (1 teaspoon)
- 9g baking soda (1.5 teaspoons)
- 50g granulated sugar (4 tablespoons)
- 1 cup raisins
- 57g COLD butter, cubed (4 tablespoons)
1. Beat egg into buttermilk. Set aside
2. In large mixing bowl, combine flour, salt, baking soda, sugar, & raisins. Mix thoroughly.
3. Add butter and using your fingers, break butter cubes into pea sized bits while mixing into flour mix.
4. Make a well and add the buttermilk & egg.
5. Use a spatula to fold everything together until a very sticky dough forms.
6. Turn dough out onto floured surface.
7. Sprinkle flour on top, and using your hands, gently form into loaf round.
8. Transfer onto parchment lined baking sheet.
9. Use a floured knife to slice a cross into the top of the loaf.
10. Bake at 425 degrees F for 30 minutes, until browned slightly. Temperature should be 200 degrees F
11. Allow to cool to warm. Slice and serve with butter and jam.
