How To make Jack Jubilee
1 md Onion, finely chopped
2 T Butter
8 oz Tomato sauce
-(1 large can) 4 oz Green chili peppers,
-chopped (1 can) 1/2 t Salt
2 Eggs, slightly beaten
1 c Half-and-half
-(or light cream) 11 oz Corn chips (one package)
1/2 lb Monterey jack cheese
-(cut into 1/2 inch cubes) 1/2 c Cheddar cheese (shredded)
Paprika 1 c Sour cream
Preheat oven to 350 degrees F. Saute onion in butter until transparent. Stir in tomato sauce, chopped peppers and salt. Simmer 5 minutes. Remove from heat. Combine eggs and cream. Stir into sauce. Place half the corn chips in bottom of a 1 1/2 quart casserole. Add in layers, half the Monterey Jack cheese, half the sauce. Repeat. Top with sour cream. Sprinkle with shredded cheddar cheese and paprika. Bake, uncovered, for 30 minutes. NOTES: * A casserole made with jack cheese -- I got this recipe from the National Dairy Council. It's good winter food; easy to make and rich. Don't let the corn chips put you off; normally, such an ingredient would make me think it's one of those recipes for people who don't like to cook and don't care about good food. Take my word for it: this recipe is an exception. * Ingredient notes for non-US cooks: Monterey Jack cheese is a bland American cheddar from Monterey, California. Try substituting Dunlop (Scottish), Lancashire (English), or Cantal (French). Half and half is a dairy product that is 50 percent whole milk and 50 percent heavy cream; light cream makes a reasonable substitute. Corn chips, often sold as "Fritos" or "Doritos," are a packaged snack food made of deep-fried pressed cornmeal. I cannot think of any reasonable substitute for them in this recipe. Queens Platinum Jubilee Fruit Cake Recipe
This Queens Platinum Jubilee Fruit Cake is the final recipe in this 3 Part platinum jubilee celebration recipes hope you enjoy watching and than you ALL so very much for all the support and kind comments A huge Thank you.
Ingredients
250 grams mixed fruit
2 Tablespoon’s of cold water
1 Whole orange zest and juice
250 grams of softened butter
4 Large Eggs
175 Grams Self Raising Flour
100 grams ground Almonds
2 Teaspoons mixed spice
2 Tablespoon’s Apricot Jam
250 grams Marzipan
Method
In a Saucepan add 250 grams of mixed fruit
Zest and Juice 1 Large Orange
Add the Orange zest and Orange juice to the Mixed fruit
Add 2 Tablespoons of Cold water
Heat on medium heat the fruit and stir until all the fruit has soaked up the liquid around 10 mins then set aside to completely cool
In a mixing bowl add 250 grams of softened butter
Add 200 Grams of Soft brown sugar
Mix with hand mixer until creamy
In a separate bowl add
175 grams self raising flour
100 grams of ground almonds
Add 2 Teaspoons of Mixed spice
And mix well
Add 4 Large Eggs to the creamed butter mixture
Mix with hand mixer until well combined
Add 1 Teaspoon Vanilla extract
Mix for 10 seconds
Add the Cooled Fruit mixture to the dry ingredients
Now add the wet ingredients
Mix well with a spatula
On a dry surface add some icing sugar roll out 250 grams of Marzipan
Using the base of your cake tin cut a round disc from the marzipan
Line your cake tin with Parchment paper
Pour half of the mixture into the cake tin
Gently place the marzipan disc on the top of the cake mixture and gently press down
Then add the remaining Cake mixture over the top of the Marzipan
Lightly Tap the cake Tin and smooth over the top to level the cake mix
Bake in a preheated oven 130c for 2 hours
Do a Toothpick test to make sure the cake is cooked throughout
Remove and allow to cool completely for 20 mins
Spread the smooth Apricot jam on the top and then decorate the fruit cake to your choice

Union Jack Lemon Traybake Cake (Vegan!) for the Platinum Jubilee! | The Rabbit Hole
Hi everyone!
To celebrate the Queen's Platinum Jubilee, in this video I will be showing you how to make this easy, delicious vegan lemon traybake, decorated with fresh berries to look like the Union Jack flag! Unlike lots of other baked goods, this one is quite basic, and it's hard to get wrong with the decorating - this is perfect to make with your family, perhaps to join your table for the big platinum jubilee picnic!

Ingredients:
1 3/4 cups Self rising flour
3/4 to 1 cup caster sugar
1 tsp Baking powder
1/4 tsp salt
1 cup Soya milk
1 tbsp Lemon juice
1/3 Sunflower oil
1 tsp vanilla essence
1 tsp lemon essence
Bake at 180 degrees for 22-27 minutes!
