How To make Jalapeno Breadsticks
1 tb Unsalted butter
1/2 md Onion; chopped medium fine
Cornmeal 2 ts Active dry yeast
1/4 c Warm water
1 1/2 ts Sugar
1 1/2 ts Salt
6 Jalapeno chiles
- (fresh or canned) - seeded, and chopped 1 c Buttermilk
3 1/2 c Bread flour
Saute onion in butter over medium heat until lightly browned. Remove from heat and set aside. Lightly grease three large baking sheets and sprinkle them with cornmeal. Sprinkle yeast over warm water in a mixing bowl. Let stand until yeast is dissolved, then stir in sugar, salt, chopped jalapenos, sauteed onion, buttermilk and 2 cups of the flour. Beat mixture well. Stir in enough of the remaining flour to make dough easy to handle. Turn dough out onto a lightly floured surface; knead about 5 minutes. Place in a large greased bowl, cover, and let rise in a warm place until double, about 1-1/2 to 2 hours. Punch down dough and divide into 4 equal parts. On a floured surface, roll out one part dough to form an 8" x 8" square. Using a knife or pizza cutter, cut the square into 8 equal strips. Place the strips onto prepared baking sheet. Repeat with remaining portions of dough. Let rise uncovered (1 hour or more for light, airy breadsticks; 30 minutes for a denser, chewier texture). Bake in a preheated 400?F oven for 10 to 12 minutes, or until golden brown.

►►HOW TO MAKE A SOURDOUGH STARTER
These are the best breadsticks we've made so far. Sourdough jalapeno ranch breadsticks are absolute fire! Not just because the spice can creep up on you, but because these taste so freakin' incredible. We were able to tone down the spice a bit by using picked jalapenos for a fresher yet tangier spiciness.
All the spice aside, ranch is our friend and is generally always a welcomed guess in our house. And if you can't get enough sauce, I wouldn't judge you if you dipped these sticks in more ranch. You don't have to... but its ok if you do. Will we come up with an even better breadstick in the future? Hard to say since these are at the top of our breadstick list. And yes, we have a breadstick list.

Ingredients
2 cup Sourdough starter (active)
1 cup Bread flour
1 tsp Salt
2 cups Mozzarella cheese
1 cup Ranch
1 cup Pickled Jalapenos
Instructions
1). Mix the sourdough starter, bread flour* and salt together in a large bowl
(*adding 1/3 cup of flour at a time until it takes shape, but is still a little sticky, add more flour if needed)
2). Knead the dough for about 30 seconds
Keep the dough in a lightly floured bowl and cover with a towel, set aside for 1 hour. Preheat over to 550° F. for 1 hour as well
3). Grate cheese
4). On a floured surface roll out dough into an 8 inch x 12 inch rectangle and carefully lift onto a parchment lined baking pan. Spread ranch on dough, then cheese and pickled jalapenos
5). Bake for 12-15 minutes or until golden brown. Remove from oven, rest 5 min
6). Slice into eighths and enjoy!

Cheese and Garlic bread, a lethal combination! Add jalapeño to it and you have winner dish!
CHEESY JALAPEÑO GARLIC BREAD
Ingredients
1 garlic bread loaf
Butter as required
2 tablespoons finely chopped garlic
1½ tablespoons finely chopped fresh parsley + for sprinkling
1 teaspoon red chilli flakes + for sprinkling
¾ cup cream cheese
1-2 fresh jalapenos, finely chopped
Salt to taste
Crushed black peppercorns to taste
¼ cup grated mozzarella cheese
1-2 fresh jalapenos, sliced
Method
1. Preheat oven to 180˚ C.
2. Halve garlic bread horizontally and place on a baking tray. Spread some butter on each halve and top with 1 tablespoon garlic and ½ tablespoon parsley.
3. Sprinkle some chilli flakes, put the tray in the preheated oven and bake for 4-5 minutes.
4. Mix together cream cheese, remaining parsley, jalapenos and ½ teaspoon chilli flakes in a bowl. Add remaining chilli flakes, salt and crushed peppercorns and mix well.
5. Spread cream cheese mixture on baked garlic bread halves. Sprinkle mozzarella cheese, chilli flakes and parsley. Top with remaining jalapeno slices.
6. Put the tray in the preheated oven and bake till the cheese melts.
7. Cut into strips and serve immediately.

Jalapeno Cheese Bread Sticks
1 1/2 C. Water
1 Tsp. Sugar
1 Packet of yeast
3 3/4 C. Flour
1 Tsp Salt
1 Tblsp Olive oil
1/2 cup of cheese or as much as you like.
1/4 cup of Jalapeños or as much as you like or none at all.
Bake at 350 for 25 to 30 minutes
