Japanese hamburger steaks can be batch cooked to feed the whole family, or cooked and then frozen for when you don’t feel like cooking.
Serve with steamed veggies or rice for a quick and easy dinner recipe, or pop them in a burger bun for a classic homemade takeaway.

For the patties:
500 g beef mince
1 onion grated
1/2 cup panko bread crumbs
¼ cup milk
½ tsp salt
½ tsp pepper
¼ tsp nutmeg
¼ cup water for steaming when cooking
Optional:
¼ cup cheddar cheese cut into 4 chunky slices, to stuff in the middle of the hamburgers
For the sauce:
3/4 cup red wine sub water and 1 tbsp soy sauce for non-alcoholic
4 tbsp tomato sauce / ketchup
2 tbsp Worcestershire sauce

00:05 Soak breadcrumbs in milk, stir in grated onion
00:24 Add beef mince, mix well
00:37 Form into patties, throw back and forth to remove air
00:58 Optional: Stuff patties with cheese
01:14 Fry 3 mins per side
01:29 Add water, cover and steam to soften
01:35 Remove lid, cook until liquid evaporates
01:47 Deglaze pan with red wine to make the sauce

How to Make Hambagu (Japanese Hamburger Steak) (Recipe) ハンバーグの作り方 (レシピ)
Served with a red wine reduction sauce, this homemade Japanese hamburger steak (Hambagu) is incredibly juicy and melts in your mouth!

INGREDIENTS (Please check the website for detailed info)
* For the Hambagu Patties
½ onion (5 oz or 142 g)
1 Tbsp neutral-flavored oil (vegetable, canola, etc)
¾ lb ground beef & pork combination (12 oz or 340 g; The good ratio for hambagu is 3 (beef) : 1 (pork). You can make hambagu with 100% beef; however, it will not be as juicy and tender as combined meat)
½ tsp kosher/sea salt (I use Diamond Crystal; Use half for table salt)
freshly ground black pepper
½ tsp nutmeg
⅓ cup panko (Japanese breadcrumbs) (20 g)
2 Tbsp milk
1 large egg
* For Cooking Hambagu
1 Tbsp neutral-flavored oil (vegetable, canola, etc)
3 Tbsp red wine (for steaming)
* For the Sauce
1 Tbsp unsalted butter
3 Tbsp ketchup (Adjust the amount - some ketchup is sweeter than others)
3 Tbsp tonkatsu sauce (Sub: You can use Worcestershire sauce. However, you have to add sugar to balance out the sourness as Tonkatsu sauce is sweeter than Worcestershire sauce. You can also make Homemade Tonkatsu Sauce.)
3 Tbsp red wine
3 Tbsp water
