How To make Koettbullar (Swedish Meatballs)
1/2 c Unseasoned bread crumbs
1/2 c Half and half cream
4 tb Unsalted butter
1/4 c Minced white onions
1/3 lb Ground beef
1/3 lb Ground veal
1/3 lb Ground pork
1 lg Egg
1/8 ts Freshly grated nutmeg
1/2 ts Salt (or to taste)
1/4 ts Freshly ground black pepper
1. Soak the bread crumbs in the half and half for 5 minutes in a large
mixing bowl. 2. Melt 1 tablespoon of the butter in a small skillet over low to moderate
heat. When the foam starts to subside, add the onions and saute them for about 2 minutes. Let cool slightly. 3. Add the beef, veal, pork, egg nutmeg, salt, pepper, and onions to the
bread-crumb mixture. Gently combine the ingredients with your hands. 4. Cover the bowl and refrigerate the mixture for a couple of hours.
5. Shape the meat mixture with your hands into uniform 2/3-inch balls.
Arrange them on a plate in one layer so they do not touch each other. Let the meatballs stand at room temperature for 30 minutes. 6. Melt the remaining butter in a saute pan or skillet over moderate heat.
When the foam starts to subside, add the meatballs. (Do not crowd the pan; unless your pan is oversized, you will have to cook gthe meatballs in batches and keep the cooked ones warm in a preheated 200 degree F oven.) Saute the meatballs for about 5 minutes until they become brown on all sides. Turn them as necessary, but do so gently. 7. Transfer the 'koettbullar' to a warm platter and serve immediately.

A classic that just had to be done ????
Meatball recipe was an adaptation from @niklasekstedt , using 50/50 beef and pork with soaked breadcrumbs and spices. Lingonberry jam was simply lingonberries, sugar, water and a pinch of salt, reduced until the right thickness. Served with buttery mash and a sauce pan gravy (meat juices, flour, stock and cream). Enjoy!

Dinner Ideas | Swedish Meatballs
Babe wanted Swedish meatballs 
Recipe for 4 large portions
Ingredients
- 500g beef mince
- 500g pork mince
- 30g panko bread crumbs
- 1 tsp allspice
- .5 tsp nutmeg
- 100ml milk
- 1 brown onion
- 500ml beef stock
- 50g butter
- 40g flour
- Salt and pepper to taste
Method
1. Start by grating your onion into a bowl. Then, add the bread crumbs salt and pepper, allspice, nutmeg, and milk and mix this together and let it sit for five minutes.
2. Add your pork and beef mince to the breadcrumb mixture and mix until homogeneous.
3. On a lined baking tray, roll your meatballs out into golf ball-size pieces and bake in a 200°C oven for 12-15 minutes
4. While the meatballs are in the oven, start making your gravy by melting the butter then adding your flour and cooking it for 3-4 minutes.
5. Warm your beef stock up (doesn't need to be boiling but shouldn't be cold either) and slowly mix that into the flour and butter mix.
6. Season this with salt and pepper (and while it's not traditional, I also like to add a couple of dashes of Worcestershire sauce as well).
7. Once your meatballs are cooked and golden on the outside, add them to the gravy you just made followed by the cream.
8. Once the cream is well mixed through the sauce, check your meatballs are fully cooked and you're good to go.
9. Serve the meatballs with mashed potato, steamed greens and cranberry sauce as traditionally they are served with lingonberry sauce but I can't seem to find any in Australia.
