How To make Lacy Potato Pancakes (Latkes)
4 Potatoes - peeled
1 sm Onion
2 Eggs
1/3 c Flour
1 ts Baking powder
1 ts Salt
1 pn Lemon pepper
or pepper oil - for frying Grate potatoes either using the largest holes on a four-sided hand grater, or the grater attachment on a food processor. Place potatoes in a colander and rinse under cold water to remove the starch. Be sure to allow potatoes to drain well. Grate onion, removing any excess moisture by placing in colander and pressing with the back of a wooden spoon. Combine potato and onion. Beat eggs into mixture; stir in flour, baking powder, salt and pepper. If using a food processor, combine ingredients using plastic knife attachment so potatoes remain in grated pieces. Heat 1/8" of oil in a large skillet. For each pancake, drop about 2 tablespoons of batter into the oil and flatten with the back of a wooden spoon; the flatter the pancake, the crisper it will be. Brown well on both sides. Drain well on paper towels. Keep the cooked pancakes warm in a 100 F oven. Serve with Pink Cinnamon Applesauce (see recipe) and/or sour cream. Makes about 2 dozen regular size or 5 dozen miniatures. Pancakes may be made ahead of time and refrigerated between layers of waxed paper when cooled. To reheat, place in a single layer on an ungreased cookie sheet. Bake uncovered at 450 F for 5 minutes, or until crisp and hot.

German Potato Pancakes (makes 8 pieces)
2 large potatoes, finely grated.
2 large potatoes, roughly grated.
1 small onion, roughly grated.
Salt and pepper to taste
2 tbsp all-purpose flour
1 egg
Oil for frying
Apple sauce to serve
Indonesian
Pancake Kentang Jerman (membuat 8 buah)
2 kentang besar, parut halus.

1 bawang bombay kecil, parut kasar.
Garam dan merica secukupnya
2 sdm tepung serbaguna
1 telur

This is a dish that brings be right back to my childhood. This is straight up Polish comfort food, and deservedly so! Simple ingredients, giving complex flavors.

Polish Potato Pancakes:
- 1.5lbs (3 large) Russet Potatoes
- 1 large onion
- 2-3 tablespoons all purpose flour
- 1 egg
- ½ teaspoon salt
- Freshly ground black pepper
1. Peel the potatoes and onion
2. You can use a fine grater to grate the potatoes and onion OR use a food processor or blender to almost puree them. Your choice. Decide on your method of grating and proceed
3. In a large mixing bowl, combine potato and onion puree, egg, 2 tablespoons flour, salt & pepper. Add additional flour if the mix is too wet.
4. In a large frying pan, coat the bottom with canola oil and heat over medium-high heat.
5. Using a spoon, drop batter in the pan one spoonful per pancake. Use the back of the spoon to flatten each pancake.
6. Fry 3-4 minutes per side until golden brown.
7. Remove from pan and drain on wire rack or paper towel for a minute.
8. Serve with applesauce, sour cream, or whatever your little heart desires!
9. Enjoy!
