[ENG] Berber Vegetable Tagine / طاجين بالخضر - CookingWithAlia - Episode 442
Let's continue the La Maison Arabe ( dada series this Berber Vegetable Tagine, a staple dish in Moroccan cuisine!
WRITTEN RECIPE:
INGREDIENTS:
Vegetables
½ onion
1 medium red-ripe tomato
1 small carrot
1 small turnip
1 small zucchini
1 small potato
½ red bell pepper
100 grams (3.5 oz.) green beans
2 small cauliflower florets
A handful of green peas, shelled
Marinade
1 teaspoon paprika
1 teaspoon ground ginger
½ teaspoon ground turmeric
¼ teaspoon ground cumin
Salt and pepper, to taste
1 tablespoon finely chopped flat-leaf parsley
1 garlic clove, crushed
1 tablespoon vegetable oil
1 tablespoon olive oil
4 tablespoons water
RECIPE:
1- Prepare the vegetables:
- Onion: finely chop
- Tomato: peel, seed, and finely chop
- Carrot: peel, cut in half, slice each half lengthwise, remove and discard the core, then slice each quarter into medium strips
- Turnip: peel, slice in half lengthwise, then slice into medium strips
- Potato: peel and cut into quarters
- Zucchini: trim ends and cut into quarters
- Red bell pepper: trim ends, seed, and slice into medium strips
- Green beans: trim ends and cut into medium strips
2- To make the spice marinade, combine all the marinade ingredients in a bowl and mix well.
3- Place the chopped onion and tomato in the tagine plate. Add 2 tablespoons of the spice marinade, mix, cover the tagine and cook on medium heat for 5 minutes until the onion and tomato melt into a thick sauce.
4- Nicely display the vegetables in the tagine, starting with the vegetables that take the longest to cook (carrot, turnip, potato) then leaving at the top the ones that take less time to cook (zucchini, cauliflower, red bell pepper, green beans, and green peas).
5- Pour the spice marinade all over the vegetables.
6- Cover the tagine and cook on medium heat for 45 minutes. From time to time check on the vegetables to make sure that there is enough liquid in the tagine. Add water if necessary, but only small amounts at a time. Also, occasionally, take some of the sauce in the tagine and baste it over the vegetables so that those placed on top absorb the marinade flavors.
7- Serve hot with crusty bread.

Moroccan lamb tagine with caramelized quinces
English
1 kg of lamb meat
1 onions
1 quince
3 cloves of garlic
A few cardamom seeds
1 tbsp of olive oil (for seasoning the meat)
1 tbsp of olive oil for cooking the meat
1 teaspoon of black pepper
1 teaspoon of turmeric
3 pinches of saffron food coloring
1 pinch of ground cinnamon
1 teaspoon of salt
100 ml of water
1 large onion + a little green olives + 2 pinch of black pepper + 2 pinch of cinnamon powder + 1 tsp of brown or white sugar + 3 pinch of saffron food coloring
1 wedges + 1 tsp cinnamon + 2 tsp brown sugar + 2 tbsp butter
For decoration:
Pitted prunes + sesame seeds

1 kg de viande d'agneaux

3 gousses d'ail
Quelques graines de cardamome
1 c.à.s d'huile d'olive(pour l assisonement de la viande)
1c.à.s d'huile d'olive pour la cuisson de la viande
1 c.à.c de poivre noire
1 c.à.c de curcuma
3 pincee de safron colorant alimentaire
1 pincee de cannelle en poudre
1 c.à.c de sel
100 ml d'eau
1 gros oignons+un peu d'olives vert+2 pincee de poivre noire+2 pincee de cannelle en poudre+1 c.à.c de sucre brun ou sucre blanc+3 pincee de safron colorant alimentaire
1 coins+1 c.à.c de cannelle+2 c.à.c de sucre brun+2c.à.s de beurre
Pour la décoration:
Des pruneaux denoyauté + des grainnes sèsames

Ingredients
2 pounds of shank Beef or good quality meat that cooks fast ( tender pieces)
1 1/2 pounds of fresh green beans
2 fresh medium large tomatoes skinless and seedless chopped
6 gloves of minced garlic
2 Tbsp of cilantro chopped
2 Tbsp of Parsley chopped
1/4 tsp salt plus more for the green beens
1/2 tsp turmeric
1/2 tsp Black pepper
1/2 tsp ginger powder
1/2 tsp cumin
1/4 tsp of Saffron (optional)
4 small pieces of fresh lemon
2 cups of water
1 Tbsp of canola oil to brown the meat
3 to 4 Tbsps of EVOO ( Extra virgin olive oil)
Please note
if you use the express cooker to cook the meat you do not need 2 cups of water. You might need less or if you cook the meat in regular pot, you may need more liquid.

الطاجن المغربي باللحم والزيتون بطريقة الشيف بن قاسم | Moroccan lamb tagine recipe
المكونات:
لحم نعيمي 1/2 - 1 كيلو
حبة بصل
3 فصوص ثوم
ملعقة صغيرة زنجبيل
ربع كوب زيت زيتون
ملعقة صغيرة فلفل اسود
ملعقة صغيرة كركم
ملعقة صغيرة ملح
زيتون اخضر
الطريقة:
نحمس اللحم بزيت الزيتون
ثم نضيف البصل والثوم والزنجبيل
نضيف البهارات والملح ثم نتركه يطبخ لمدة ساعة
نضيف الزيتون ونتركه يطبخ عشرة دقائق وبالعافيه

Ingredients:
1-1/2 K pieces of lamb
1 Onion
3 Garlic cloves
1 tsp Grated ginger
1/4 cup of olive oil
1 tsp Black pepper
1 tsp Turmeric (curcuma)
1 tsp Salt
Green olive as preferred
Method:
Cook the lamb with olive oil, then add the onion, garlic and ginger
Add all the spices and leave it to cook for an hour
Add the green olives and let it simmer for 10 more minutes then serve

I shouldn't play favourites, but Lamb Tagine is my pick of the tagine family! The rasa el hanout spice mix is sheer perfection with lamb, and slow cooking works wonders to develop rich flavour in the sauce. Serve over couscous for a stunning Moroccan meal!
