Pierogi Casserole -- PA Coal Region Comfort Food
Not everyone has the time to make pierogis! So whip up this easy pierogi casserole with your left over mashed potatoes and enjoy all the taste without the work and time of traditional pierogis! Don't worry, I have a vid coming on making the real deal pierogis soon! Recipe below!
Pierogi Casserole
6 C mashed potatoes
2 lg onions, diced and sauteed in butter
6-8 strips of bacon cooked, and cooled
4 C cheddar cheese or cheese of your choosing
1 8oz block of Philly Cream Cheese
2 tbs of parlsey
pepper to taste
6 lasagna noodles, cooked and drained
non stick cooking spray
Directions--
Combine mashed potatoes and cream cheese, mix well.
Put a layer of the potato mixture on the bottom of a greased 9x11 casserole dish.
Then add a portion of the onions.
Then add a portion of th bacon, crumbled.
Then add a portion of the shredded cheese.
Add pepper and parsley.
Place 3 lasagna noodles on this and repeat.
Bake at 375F for roughly a half hr, until cheese is melted and golden.

Need Cheese the More cheese you have the better ,, you can pick what ever type you perfer the most,,
Noodles that need to be boiled , Oven ready noodles will make this recipe fail , I have already tried those
Onions
Mashed Pototoes and Butter
Once you have the mashed potatoes your going too fry the onions
in a frying pan ,,
once everything is cooked your going too layer the bottom of the oven ready pan , please spray bottom with veggie oil to prevent sticking
One layer of Noodles
then Layer of mashed potatoes
cover with fried onions , then cover with shredded cheese, then repeat the layers Until you Reach the top
Once you are done ,, uncovered for next 30 Minute on 375 cut and enjoy

16 oz. Mrs. T’s classic onion pierogi
2 cups Giant Eagle shredded Mozzarella

PIEROGI/THE BEST LAZY PIEROGI RECIPE/CHERYLS HOME COOKING/EPISODE 352
This video show how I use left over cabbage. Its calle Lazy Pierogi. QUick and easy to make too! A hit with my family! Give it a try and as always... ENJOY!
Ingredients
Cabbage 2 Small, cored, chopped (leftover)
Butter stick 3 , divided
Canned sauerkraut 27 Ounce, drained, rinsed, liquid squeezed out using cheesecloth/ towel
Egg noodles 12 Ounce (1 package)
Kosher salt To Taste
Pepper To Taste
Directions
GETTING READY:
Cook egg noodles according to package directions.
Once done, drain well.
MAKING:
In a saucepan, combine 1 stick of butter, cabbage and brown over medium heat.
Add sauerkraut with 1 butter stick and mix well.
Season with salt and pepper.
Add cooked noodles, 1 butter stick, pepper and mix well.
SERVING:
Serve and enjoy!
