Giouvarlakia (or Yuvarlakia) Avgolemono is a Greek traditional dish with rice meatballs in lemony, sauce. Avgolemono sauce has a magic way of making whatever food you use it on tastes 10 times better and in my honest opinion complicates perfectly this dish.
Giouvarlakia meatballs are delicious and very easy to make so let's get cooking!

✔ Ingredients:
For the Giouvarlakia meatballs
◾ 500g Minced beef
◾ 1 large carrot, grated
◾ 1 onion, blended and drained
◾ 1 Tbsp Olive oil
◾ 1 egg
◾ ½ cup Dill, finely chopped
◾ ½ cup Parsley, finely chopped
◾ ½ cup of short grain Rice, washed and drained (125g)
◾ 1.5 liters of water
◾ 100g all-purpose Flour, for coating the meatballs
◾ A pinch of Salt /Pepper
For the Avgolemono sauce
◾ 2 lemons, their juice
◾ 2 eggs (yolks and whites separated)
◾ 1 and 1/2 Τbsp corn starch

2 lbs ground beef
1 cup uncle bens rice, uncooked
1 yellow onion
3 eggs
4 lemons, juiced
2 slices of bread
3 tbsp chopped fresh parsley
1 ½ tsp. coarse sea salt
1 ½ tsp. fresh ground black pepper
48 ounces chicken broth
½ cup flour, for dredging

SPINACH BALLS INGREDIENTS:
• 2 (10 oz.) packages frozen spinach, thawed & well-drained
• 2 small onions, very finely chopped
• 2 1/4 c. Pepperidge Farm stuffing with herbs
• 6 eggs, beaten
• 1/2 c. butter, melted
• 1/2 c. Parmesan cheese
• 2 tsp. garlic salt
• 1 tsp. black pepper

You Need: 2 Slices White Bread | 1/2 Cup Milk | 1/2 Seedless Cucumber | Sea Salt | 3 TBS EVOO | 1.5 Lbs. Lamb | Pepper | 1/4 Chopped Mint | 3 TBS Red Onion | 1 TBS Oregano | 2 Pinches Cinnamon | 3 Cloves Garlic Grated | 1 Large Egg | Zest and Juice of Lemon | Pita bread | 1.5 Cups Greek yogurt | 3 Tbs Dill Weed
Directions: 1) Pre Heat Oven 450 2) Soak the bread in milk. 3) Combine Olive Oil, Lamb, Salt and pepper In Bowl. 4) Squeeze out bread and crumble between fingers into bowl. 5) Add the mint, onions, oregano, cinnamon, 2 of the garlic cloves, egg and 1/2 of the lemon juice, and mix to combine. 6) Using a small ice cream scoop, form the meat mixture into balls and place on the baking sheet cook 15 to 18 minutes. 7) Press the cucumber in the strainer to get out the excess water and add to a food processor. 8) Add the yogurt, dill, remaining 1 clove garlic, zest and remaining juice of the lemon. 9) Serve it!
Amazing Artichoke Dip
This delicious Artichoke Dip is one of my favorite easy appetizers, made with simple ingredients in less than 30 minutes! We love it served warm, with crackers or bread chunks for dipping.
PRINT THE RECIPE:
INGREDIENTS:
▢8 ounce can artichoke hearts (not marinated), drained and chopped
▢1/2 cup sour cream
▢1/2 cup mayonnaise
▢8 ounces cream cheese , softened
▢1 1/4 cups freshly grated parmesan cheese
▢1 clove garlic , minced
▢dried dill weed , to taste (fresh or dried)
INSTRUCTIONS:
Preheat oven to 350 degrees F.
To a mixing bowl add sour cream, mayo, cream cheese, garlic and 1 cup of parmesan cheese. Combine until smooth.
Stir in chopped artichoke hearts and a little bit of dill weed, to taste.
Place in a greased baking dish (most pan sizes around 8×8 in or a little smaller will work. You could even use a pie pan).
Sprinkle remaining ¼ cup of parmesan cheese on top. Sprinkle with a little extra dill weed, if desired.
Bake in preheated oven for about 20 minutes or until hot and bubbly. Serve warm with crackers, bread, or veggies.
