A pancake (or hotcake, griddlecake, or flapjack, not to be confused with oat bar flapjacks) is a flat cake, often thin and round, prepared from a starch-based batter that may contain eggs, milk and butter and cooked on a hot surface such as a griddle or frying pan, often frying with oil or butter. Archaeological evidence suggests that pancakes were probably the earliest and most widespread cereal food eaten in prehistoric societies.
The lemon is a species of small evergreen trees in the flowering plant family Rutaceae, native to Asia, primarily Northeast India, Northern Myanmar or China. Wikipedia
INGREDIENTS:
1.5 cups self raising flour
2.5 spoons sugar
Pinch of salt
Zest of 1 lemon
1 egg
1/2 Cup water
1/2 cup milk
1-2 Tbsp lemon juice
2 Tbsp cooking oil
PS: I've used the standard measuring cup (250ml) you can also use mkebe ya yoghurt(250ml)

How to Make Lemon Blueberry Pancakes
Light and fluffy Lemon Blueberry Pancakes that can be whipped up quickly, with basic pantry ingredients.
???? Ingredients ????
▢ 2 cups buttermilk
▢ 1/2 teaspoon baking soda
▢ 1 lemon, zest and juice
▢ 1 large egg
▢ 1 1/2 teaspoons vanilla extract
▢ 2 Tablespoons butter, melted
▢ 2 cups all-purpose flour
▢ 1/4 teaspoon salt
▢ 2 1/2 teaspoons baking powder
▢ 3 Tablespoons granulated sugar
▢ 1 cup blueberries, fresh or frozen

Heat skillet over medium heat.
In a mixing bowl stir together buttermilk, baking soda, and juice and zest of lemon. Add egg, vanilla, and melted butter and stir to combine. In a separate large mixing bowl stir together flour, salt, baking powder, and sugar.
Pour wet mixture into dry ingredients and stir just until combined. There may be some lumps--don't over-mix the bater. Gently stir in blueberries.
Grease the warm skillet with butter or non-stick cooking spray. Use a 1/4 measuring cup to spoon the batter onto the pan. Cook until the bottom of the pancakes are golden and bubbles come to the surface. Flip to the other side and cook until golden.

LEMON RICOTTA PANCAKES RECIPE
INGREDIENTS
1 Cup /250g Ricotta Cheese
2 Eggs
1/2 Cup / 125ml Milk
1 Lemon Zested
1 Cup / 125g Flour
1 tsp Baking Powder
3 Tbsp / 25g Sugar
1/2 tsp Salt
INSTRUCTIONS
In a medium sized mixing bowl add the ricotta cheese, eggs, milk and lemon zest. Mix the ingredients together with a whisk or wooden spoon until well combined.
In a smaller mixing bowl add the flour, baking powder, sugar and salt. Mix together until combined.
Pour the dry ingredients into the bowl of the wet ingredients and fold the pancake batter together with a wooden spoon. Stop mixing as soon as there is no longer any dry flour.
Heat a medium sized frypan over medium-low heat and add 1/2 tsp of butter.
Pour 1/3 Cup of pancake batter into the frypan and cook the pancake for about 3 minutes or until the edges are starting to set. Flip and cook on the other side for a further few minutes.
Repeat with the remaining pancake batter.
NOTES
Serve the pancakes dusted with powdered sugar and optionally some syrup
