How To make Light Swiss Enchiladas
12 Corn Tortillas
1 Medium onion, chopped
1 Clove garlic, pressed/minced
1/2 lb Lean ground chicken
16 oz Can, tomato puree
1/4 c Canned whole green chiles
1/2 ts Salt
2 1/2 c Defatted, chicken stock
2 c Dry instant non-fat milk
1/2 lb Low fat Swiss cheese grated
1 Fresh cilantro garnish
Servings: 4 Can use fat-reduced Swiss or Jack cheese, grated, 2 cups. Omit salt if stock is salted. Preheat oven to 350 degrees. Wrap tortillas tightly in foil and place in preheated oven for 15 minutes to soften. While tortillas are warming, cook onion an dgarlic, covered, over low heat until soft, adding a little water or stock if necessary to prevent scorching. Add chicken and cook over medium heat, stiffing frequently until chicken is cooked, about 5 minutes. Add tomato puree, chilies and salt and mix well. Simmer, uncovered for 10 minutes. While chicken mixture is simmering, combine stock and dry milk powder in saucepan and mix thoroughly. Slowly heat to simmer, stirring frequently. Dip each tortilla in milk sauce. Divide chicken filling, spooning 1/4 cup mixture down the center of each tortilla. Roll each tortilla around filling and place, seam side down, in glass baking dish that has been sprayed with non-stick vegetable coating. Pour milk sauce over top and bake in 350 degree oven for 20 minutes. Remove from oven and sprinkle grated cheese evenly over top. Return to oven for another 5 minutes until cheese is melted. To serve, place each enchilada on a plate and garnish with fresh cilantro if desired. This recipe may also be made in individual au gratin dishes. THE FILLING
1 1/2 lbs (681 g) large shrimp
1/2 tsp Old Bay seasoning
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp lemon pepper
8 oz (227 g) lump crab meat
1 medium bell pepper
1/2 medium red onion
3 cloves of garlic
5 to 6 scallions
pinch of salt and pepper
12 oz pepper jack cheese (shredded)
THE CREAM SAUCE
3 Tbsp butter
3 1/2 Tbsp all-purpose flour
1/4 tsp onion powder
1 Tbsp chicken bouillon powder
1 chipotle pepper in adobo sauce
1 Tbsp adobo sauce from the can of chipotle peppers
1 1/2 cup water
1 cup heavy cream
⭐️ ENCHILADAS ROJAS
14 to 16 corn tortillas
10 oz (283 g) Oaxaca cheese
1/2 medium onion (diced)
cooking oil for griddle
**Toppings**
Cotija cheese
Shredded lettuce or cabbage
Diced Onion

**Red Enchilada Sauce**
6 to 7 dried guajillo chiles (cleaned and rinsed)
small piece of onion
1 clove of garlic
2 tsp chicken bouillon powder
salt to taste
1/2 to 3/4 cup water or soaking liquid

A one-skillet dinner, this vegetable-packed take on Swiss enchiladas makes a delicious and slightly decadent dinner. Crema and cheese are the Swiss parts which top layers of poblano peppers, red onion, and zucchini with soft corn tortillas dipped in green salsa and all baked to perfection.
INGREDIENTS:
-2 tablespoons vegetable oil
-1 large poblano, ribs and seeds removed, thinly sliced (1 ½ cups)
-1 small red onion, halved and thinly sliced (1 ¼ cups)
-Kosher salt and freshly ground pepper
-1 medium zucchini, cut into a ½-inch dice (1 ½ cups)
-1 ½ cups green salsa (from a 16.7-ounce jar), such as La Costeña
-6 corn tortillas (each 6 inches)
-5 ounces low-moisture mozzarella, cut into a ½-inch dice
-1/3 cup Mexican crema or sour cream
-Shredded iceberg lettuce, sliced radishes, and halved cherry tomatoes, for serving

Join us for a low carb recipe remake! Today, we tackle a favorite recipe for Enchiladas Suizas, also called Enchiladas Suisse. This delicious, creamy, casserole-style dish easily lends itself to a low carb version with a few alterations from the original recipe.
The original recipe comes from the popular cookbook Some Like It South! by the Junior League of Pensacola. You can find out more about the Junior League and the cookbook at
For this low carb version, we needed to replace the tortillas with a low carb alternatives. You can use a commercial low carb tortilla if that fits in your diet plan and goals. Otherwise, we recommend using the popular Low Carb Tortilla recipe from Keto Connect. It can be found at

LOW CARB ENCHILADAS SUIZAS / SUISSE
1/3 cup chopped onion
1 clove minced garlic
1 T. bacon fat or oil
8-ounce can tomato sauce + 1 can water
4-ounce can chopped green chiles (do not drain)
3 cups chopped, cooked chicken
2 cups heavy whipping cream
1/2 cup water
4 chicken bouillon cubes (or equivalent)
1/2 pound grated Swiss cheese
Salt & pepper to taste
10 low carb tortillas from Keto Connect

1. Over medium heat, saute the onion in the oil util soft and translucent.
2. Add garlic, tomato puree, chilis and chicken.
3. Simmer for 10 minutes. Season to taste with salt and pepper
4. Gently heat the 2 cups of heavy cream and 1/2 cup of water over low heat and dissolve bouillon in cream.
5. Fill each with 1/4c. chicken mixture. Roll up tortillas and place seam-side down in a 9x13 casserole dish.
6. Pour the cream mixture over tortillas and sprinkle with the grated cheese.
7. Bake at 350 degrees for 30 minutes.

Macros 1 serving: 372 calories, 23C, 16F, 33P
600g chicken thighs skinless boneless
6g smoked paprika
6g garlic powder
3g cayenne pepper
3g cumin
4g salt
black pepper
Mint sauce:
200g skyr
15g oil
10g mustard
10g vinegar
20g basil
10g mint
10g cilantro
salt, pepper
salsa:
1 onion
2 cloves garlic
100g tomato salsa
200g chicken stock
3g smoked paprika
1g chili powder
1g cayenne pepper
1g cumin
salt, pepper
6 tortillas 20cm or 9,5inch
140g shredded cheese
Directions:
Add chicken with the spices into a bowl and mix everything. Add a bit of oil into a baking dish and dump in the chicken and spread them. Bake the chicken at 200°C or 400°F for 15-18 minutes.
Combine all mint sauce ingredients in a blender and mix it for 20 seconds. Transfer the sauce to a squeeze bottle.
Add oil into a pan on medium heat and add in the onions. Fry them for 3 minutes. Add in more oil crush in garlic, and keep frying for 15 more seconds. Now add in spices and toast them for 30 seconds. Add in stock, salsa, salt, and pepper and mix. Let it simmer for 8-10 minutes on low heat.
Now prepare the 6 tortillas and fill them with chicken, 10-15g of mint sauce, and 15g of cheese each. Roll them up. Add to a baking dish half of the salsa, spread all 6 tortillas in, and add the other half of the salsa and 50g of cheese. Bake this for 3-4 minutes at 200°C or 400°F just until the cheese is melted. Done!
