How To make Little Jam Cakes
4 Eggs, separated
1 c Sugar
1 ts Vanilla
1 ts Lemon juice
1 1/2 c All purpose flour (measured
Then sifted) 1/4 ts Salt
1 c Melted butter or margarine
1 c Gooseberry jam
Beat egg yolks until thick and beat in the sugar, vanilla and lemon juice. Fold in sifted flour and salt alternately with melted butter. When smooth, fold in stiffly beaten egg whites. Line 16 large or 24 small muffing pans with paper cups. Place a spoonful of batter in the bottom of each cup and a heaping teaspoon of jam. Cover with remaining batter. Bake at 350F for 15 to 25 minutes depending on the size.

???? Cake Ingredients:
3 Eggs
90g Sugar
20g Vegetable Oil
90g All Purpose Flour
1/2 teaspoon Baking Powder
Cream Cheese Frosting:
1 cup (235g) Whipping Cream
100g Powdered Sugar
8oz (225g) Cream Cheese or Mascarpone Cream Cheese
You can add 2 tsp instant pudding mix as stabilizer
2 teaspoons Water
1 teaspoon sugar
150g Strawberry Jam
???? Cake Instructions:
1. Preheat the oven to 356F (180C).
2. In a large mixing bowl, add eggs and sugar. Whisk until creamy. Add vegetable oil, flour, baking powder. Mix until combined.
3. Pour the batter into a buttered or oiled cake pan (I used 7 springform pan).
4. Bake in the preheated oven for 30 minutes or until toothpick inserted comes out clean. Let the cake cool to room temperature.
5. Slice the cake to 3 equal layers. Take the middle layer and cut off outer crust. Grind it in the food processor or blender to make fine crumbs.
6. In a large mixing bowl, add whipping cream and whisk until stiff peaks form. Add powdered sugar and cream cheese. Whisk until well combined. If frosting is too soft, add more powdered sugar or add instant pudding mix as stabilizer.
7. Transfer half of frosting to a piping bag. Keep the frosting in the refrigerator until needed.
8. Transfer strawberry jam to a piping bag.
9. In a small bowl, add water and sugar. Mix until sugar dissolves.
10. Using a brush or spoon, apply the mixture to the bottom ayer.
11. Add cream cheese frosting and strawberry jam. (watch video tutorial).
12. Add cream cheese frosting all over the top layer and smooth it out with a spatula.
13. Add the cake crumbs on top and the sides of the cake.
14. Keep the cake in the refrigerator for 30 minutes before slicing and serving.

INGREDIENTS:
2 eggs
Sugar 1/4 cup
Whisk until foamy consistency
All purpose flour 1/4 cup
Baking powder 1/8 tsp
Mix slowly
Oil 1 tbsp
Vanilla 1/2 tsp
Non stick fry pan
Grease oil
Cover the lid hole
Cook it on low flame for 8-10 mins
Spread jam
Keep it in the fridge for 10 mins
Powder sugar
NOTE: 1 CUP = 250 ML
