Here are two easy recipes for everyone’s favorite summer sandwich, the lobster roll. Do you prefer mayonnaise or brown butter? I couldn’t decide, so I’m showing you how to make both. A buttered and toasted bun stuffed with fresh lobster is essential, after that dress it up the way you like it.

INGREDIENT LIST (Serves 6)
Lobster Rolls
1 pound fully cooked lobster meat, or 5 pounds live lobsters
1 medium cucumber (5 to 6 ounces), peeled, seeded, and finely diced
1/2 cup Special Tarragon Mayonnaise (recipe follows); or bottled mayonnaise; or bottled mayonnaise mixed with the seasonings in the Special Tarragon Mayonnaise recipe below, to taste
3 small scallions (white and most of the green parts), thinly sliced
Kosher or sea salt
Freshly ground black pepper
6 New England-style top-split hot dog buns (or regular hot dog buns, with about 1/4-inch of the sides shaved off to make a flat surface for griddling)
6 tablespoons unsalted butter, softened
Pickles and potato chips, for serving
Special Tarragon Mayonnaise
1 large egg yolk
1 tablespoons Dijon mustard
2 teaspoons chopped fresh tarragon leaves
1 cup salad oil, such as safflower, sunflower, or refined peanut (avoid full-flavored oil)
Juice of 1/2 large lemon
1 tablespoon ice water
Kosher or sea salt
Freshly ground black pepper
Cayenne pepper or Tabasco sauce

Maine lobsters are used in Gordon Ramsay's lobster roll recipe. More meat than a lobster is packed into this New England summer classic. A huge appeal is the contrast between the cold, creamy lobster salad (not to be confused with a Connecticut lobster roll, served warm and dressed with drawn butter) and the warm, toasted bun.
In contrast with the rich lobster, finely chopped celery and scallions provide crunch and a crisp vegetable note. In place of celery, cucumbers make a cool, refreshing substitute.

Additional Ingredients for Your Lobster Rolls

In addition to the tail, claw, and knuckle meat from one or two 1 1/4 lb lobsters cut up into small pieces, you will need:
1-2 tablespoons mayonnaise (in other words, one tablespoon per lobster)
Pepper (optional)
Salt (optional) - Sea salt is best
1-2 medium stalks of celery, finely diced (optional)
2 New England-style hot dog rolls (they're split along the top - we call them top-loaders). If you live outside of New England and can't find these, take a regular hot dog bun and slice off the crust on the bottom and top so that it resembles a New England roll
2 - 4 tablespoons of softened butter
4 lemon wedges
Potato chips or French fries and pickle for serving (optional)
How to Make Lobster Rolls -Traditional and Connecticut Style

Lobster rolls tradition and Connecticut style
Ingredients-traditional
1 pound lobster claw meat precooked
1/4 cup diced celery (chopped)
1 tbsp. Fresh dill (chopped)
1 tbsp. Fresh parsley
Salt and pepper to taste
The juice of 1 lemon
1 Tbsp. Of mayonnaise
Directions
In a large bowl mix all of the ingredients together and place in a grilled roll.
Connecticut Style Lobster Roll
1/2 pound of lobster claw meat precooked
1 tsp terragon
1 tsp old bay seasoning
2 tbsps butter
Directions
Melt butter in skillet and add lobster meat to skillet to warm through
Place in a grilled roll and enjoy
