Add eggs 1 at a time, beating well after each addition. Add extracts. Add dry ingredients; fold until just combined (batter will resemble cookie dough). Spoon batter into prepared pan. Smooth top. FOOD | LOW FAT Whiskey Cake
This LOW FAT rich fruit cake tastes absolutely delicious, it's an Irish Whiskey Cake.
Music by:
Here's the Ingredients:
115g/4oz glace cherries
175g/6oz dark Muscovado sugar
115g/4oz sultanas
115g/4oz raisins
115g/4oz currants
300ml/ .5 pint cold tea
300g/10oz self-raising flour
1 egg
45ml/3 tbsp Irish Whiskey
Oven: 180 degrees C / 350 degrees F / Gas 4 for 1 hour. 15 minutes.
Tip: Ideally, soak fruit and sugar overnight. For this video, I soaked the fruit for about an hour and drained off the excess liquid (tea) before adding the flour and egg. Oh, and I also used a 1kg loaf tin.
