How To make Macadamia Nut Tartlets
Pastry: 6 oz Butter
2 c Flour
1/3 c Sugar
1/4 ts Salt
Filling: 3 oz Butter
1 1/3 c Macadamia nuts/unsalted
=finely chop 2/3 c Sugar
3 Eggs; lightly beaten
48 Macadamia halves; garnish
1/2 c Dark corn syrup
DESCRIPTION: Miniature macadamia tartlets deliver a delicious mouthful. Preheat oven to 400~ 15 minutes prior to baking. Cream together butter and sugar until smooth. Sift flour and salt together; stir into butter mixture and blend well. Pinch off pieces of dough to make 1/2" balls. Press each ball into a mini muffin tin mold to about 1/8" thickness. Chill for 15 minutes. FILLING: Cream butter and sugar until well-blended. Beat in eggs; add salt, corn syrup and vanilla. Blend well, stir in chopped macadamias. Spoon 1 TBL filling into each tartlet cup. Filling and pastry should be level at
the rims. Decorate each tartlet with a madacamia half. Place mini muffin tins on baking sheets and bake for 25 minutes, or until pastry is rich, golden brown. Cool pans on rack for five minutes. While tartlets are still warm, twist each gently to loosen from pan. Remove tartlets from pan and cool on racks. STORAGE: Airtight about one week. Freeze well-wrapped up to two months. Recipe of macadamia nut tart
To make dough for crust
Unbleached all purpose flour 1 cup
Chilled water 2 1/2 tbsp
Egg yolk 1
Vanilla essence 1/2 tsp
Sugar 2 tbs
Unsalted cold butter 4 tbs
Baking powder 1/8 tsp
Macadamia nuts 2 tbs to garnish
Filling for macadamia nut tart
Macadamia nuts 1 cup make a paste of it
Sugar 3 tbs
Unsalted butter 1 tbs
Cinnamon powder 1/8 tsp
Mixer of corn starch 1 tbs with 2 tbs of water
A seven inches round tart pan to bake it
Method
First make filling and make it cool down to fill the tart. Add butter in pan and melt it on medium high flame then keep the flame medium low and add paste of macadamia nuts, cook it for 10 seconds then add sugar, mix it and add cinnamon powder, cook everything for 10 seconds then add mixer of water and corn starch, give it a quick mix and cook for 5,6 seconds then pour it in bowl.
In a pan add 1 cup of flour and 4 tbsp of butter, mix them with hands to make it crumbly then add sugar and mix them together. Now add baking powder, vanilla essence and egg yolk, mix them for 40 seconds when dough starts to bind up in your fingers then add chilled water and mix everything together until you get a nice texture of dough. Keep it at room temperature for 15 minutes. Then preheat oven at 350°F for 15 minutes, set dough in pan with your finger tips as shown in video and make edges beautiful by pressing them with your finger tips and thumb. Poke the center of crust with a fork so it can stay stick to the pan, pour macadamia nut filling in crust and make it even then set macadamia nuts on tart. Bake it for 35 minutes in preheated oven. This week I’ll show you how to make some Amazing Crunchy Pastries using phyllo dough. The star here is my Crunchy Chocolate Macadamia Nut Pastry. These are all very light and full of flavor. I use cheese and brown sugar, which seems like a strange combination, but it works very well here. When you try these for yourself, you will be amazed with the flavors.
For ingredients, I used about 3 ounces of each:
Brie Cheese
Cotija Cheese
Chopped Macadamia Nuts
Chopped Walnuts
Brown Sugar
Chopped Milk Chocolate Chips
Blueberry Compote (ask me for the recipe)
Bake in the oven at 325 degrees for 12 minutes or until golden brown.
You can substitute any ingredients you like here. These were just 3 that I thought would work well. I encourage you to try something that sounds good to you and see how it goes.
