1/2 c Plum sauce (or plum
-preserves) 2 tb Brown sugar
1 tb Worcestershire sauce
1 Clove garlic, minced
1 sl Garlic root, minced (or 1/2
-tsp ground) 1 tb Arrowroot
2 tb Water
From "Count Out Cholesterol Cookbook" By Mary Ward. If you have a taste for chicken wings, try these. They are hot, spicy and delicious. To reduce the fat and cholesterol even further, use lean chicken breast strips in place of the wings. Serves 6 (3 wing pieces) no stick cooking spray Cut off wing tips and discard (T: or stash in the freezer for stockpot later). Separate the wings at the joints. Cut off any visible fat. Wash and pat dry. Or simply use the chicken strips. In a med saucepan, combine the teriyaki sauce, plum sauce, sugar, Worcestershire sauce, garlic, ginger, arrowroot, and water. Heat, whisking the sauce, until smooth and thick and the sugar and arrowroot are dissolved. Put the chicken pieces in the hot marinade, cover, and refrigerate for 4 hours or overnight. Preheat oven to 400F. Spray a lg baking pan with no stick cooking spray. Drain marinade from wings. Bake for 15 min until they are tender and crispy. (Or, bake chicken strips for 10 min.) Serve hot. Each serving (3 wings): Cal 485; chol 129mg For chicken strips: Cal 165; chol 51mg

Southern Style Smothered Chicken with Gravy | Smothered Chicken Recipe????
Ingredients:
1 whole cut-up chicken
salt
black pepper
onion powder
garlic powder
garlic and herb seasoning
spicy seasoning
chicken seasoning
dried parsley
(((Clean, wash and pat dry your chicken, place chicken in a bowl, add all seasoning listed above to your chicken parts. )))
1 tablespoon unsalted butter
1 tablespoon olive oil
(((Place a cast iron skillet on high heat, add butter and oil, brown chicken parts on both sides. Remove from skillet and set aside.)))
1/2 onion, chopped
1/2 green bell, chopped
1 stalk of celery, sliced thin
(((add the veggie listed above to the same skillet you cooked the chicken in, don't clean your skillet. cook veggie cook 3 to 5 mins, set aside. Please use a wooden spoon, do not use a plastic spoon)))
1/2 cup flour
1/2 cooking oil
1/2 stick unsalted butter
(((add flour and cooking oil to the skillet, cook on med-high for 15-30 mins...until the roux turns BROWN, please KEEP STIRRING THE ROUX at all times. WATCH: your heat level. When your roux turns BROWN, ADD: the 1/2 stick of butter, KEEP STIRRING.))) ADD: your cooked VEGGIES to the roux.
(1) 32. oz Chicken Broth
(((Add the chicken broth a little bit at a time, keep stirring and add more broth. Get your gravy to the thickness you like. TASTE the gravy))) Seasoning it to your liking using these ingredients BELOW.

Braised Chicken Wings | Red Cooked Chicken Wings Chinese Recipe
This is a traditional Chinese Braised Chicken Wings recipe that is super easy to make and perfect as a snack, starter, side dish or party finger food.
Ingredients
1. Chicken Wings (1 kg)
2. Brown Sugar / Rock sugar (2-3 tsp)
3. Dark Soy Sauce (1 tbsp)
4. Light Soy Sauce (1 tbsp)
5. Shaoxing Wine (1 tbsp)
6. Ginger (10g)
7. 2 Spring Onions
8. Hoisin Sauce (2 tbsp)
9. Chicken Stock (100-200 ml)
10. Salt, Pepper & Oil
Braising is a very common method of cooking in Chinese households and it is often called Red Cooking.
The Chicken Wings are lightly fried and then braised in a little liquid with soy sauce, rock sugar, rice wine and sometimes with other spices to achieve a savoury dish with a rich mahogany colour.
Many types of meat and vegetables can be cooked in this way and my red-cooked chicken wing recipe is a traditional recipe except I'm using brown sugar instead of rock sugar as it is more widely available.
Hoisin Sauce is widely available in most large supermarkets but you could also substitute that for oyster sauce.
