The most important part of a lassi is the mango. It’s best to have very sweet mangoes that are not fibrous. Depending on where you live and the season, you might not have access to these perfectly sweet mangoes. There are a few options - you can buy frozen mangoes which are generally frozen when in season and sweet. The other option is canned mango pulp. This is made from Alphonso mangoes also known as the king of mangoes. It’s one of the best tasting variety of mangoes, rich, smooth and creamy.
First I’ll use mangoes that I bought in season when they were really sweet. I buy extra, cut them up and freeze them. This is about 1.5 cups. Put that in the blender. Add 1 cup milk and blend. Add more milk if it's too thick. Taste and add sugar according to your taste. Since the mango was frozen and the milk is cold, I didn’t need to add any ice to this.
Second, I bought a big fresh mango from the store and cut it up. This mango is not fibrous, it’s very sweet. This is about 1.5 cups. I’ll add ½ cup of whole milk yogurt and a teaspoon of sugar. Blend until smooth. Taste and add more sugar to taste.
Third, I’m using the canned mango pulp. 1 cup of pulp, ½ cup whole milk yogurt, 3 ice cubes. Blend this, taste and add sugar if you need to. Also, add a little water or milk if you want the Lassi more thin. This is the closest to restaurant style mango lassi.
If you like cardamom, add a pinch while blending. I like the pure taste of mango, so I skip the cardamom.
The tang of yogurt is ideal for Lassi, use whole milk yogurt for the best taste. My favorite is the canned mango with the fresh mango a very close second. Usually fresh is best but in this case, it’s really hard to beat the taste of this amazing mango.
