The thicker the batter the thicker the breading will be on the fish. Can be deep-fried or pan-fried. When pan-frying use a generous amount of oil, 3/4 of the fillet should be covered. Be sure oil (Crisco works best) is pre-heated to the point that the fish begins frying as soon as it is placed in the skillet. Test with drops of water if unsure. Fish is done when lightly browned on both sides.

Serves 2 – multiply as needed Ingredients: • 6 fresh sage leaves – 2 whole, 4 finely chopped • 6 Tbsp olive oil – divided use • ¼ C dry white wine • 2 boneless, skinless chicken breasts or 2 - 1” thick center cut pork chops, each piece of meat butterflied and pounded thin into one large piece • ¼ C all purpose flour • 2 eggs well beaten with 1 Tbsp H2O • ½ C panko breadcrumbs • ¼ C fine plain breadcrumbs • Kosher salt • Freshly ground pepper • ½ tsp dried sage • 4 thin slices of prosciutto ham (find this at the deli counter) • 4 oz freshly grated mozzarella • 1 stick unsalted butter – divided use • 1 lemon • 1 cup polenta (coarsely ground corn – usually yellow) • 4 C water + more as needed • Freshly grated parmesan cheese
Equipment • 12” Oven safe skillet • 3 qt saucepan for polenta • Whisk that is safe for your saucepan • Heat safe slotted spoon • Paper towels • Plastic wrap • Meat mallet • 2 shallow plates for flour and breadcrumbs • 1 shallow dish with sides for beaten egg • Tongs • Plates and utensils for serving
