How To make Maritime Madness
1 lb Hamburg
1 cn Mushroom soup
1/2 c Chopped onion
1 tb Parsley flakes
1 ts Salt
1/2 ts Pepper
1/2 ts Sage
3 tb Ketchup
1 tb Barbaque sauce
1/2 ts Garlic powder
1/2 c Oatmeal
Combine all ingredients in bowl and mix well. Pat down in casserole and bake (covered) 50 min. at 350, remove cover and continue to bake 15 min. to brown.

This is Fire Candy Sweet & Hot Candied Habanero Sauce!! This really is a perfect name for this great sauce! They did a GREAT job of this sauce! We have canned our own candied Habaneros here at home and this captures the flavor of that snack in delicious liquid form!!

The Gastro Guru @ Home with Jeremy Parsons is back with two cocktails and two appetizers that will have you sipping, shaking and cooking along.
Here are the recipes:
Cocktails
Sparkling Blood Orange Paloma
2 oz. Jose Cuervo Tradicional
5 oz. Fever Tree Pink Grapefruit
2 wedges Blood Orange
Directions
In a shaker half full of ice add tequila and blood orange together. Shake until well combines. Pour into a rocks glass and top with Fever Tree.
Smoked Tradicional Old Fashion
2 oz. Jose Cuervo Traditional Tequila
¾ oz. Mixed Berry and Rhubarb Simple Syrup
4 Dashes Angostura Orange Bitters
1 squirt Fresh Blood Orange
Directions
In a mixing glass combine all ingredients. Stir until chilled and strain over 1 large fresh Ice cube. Garnish with a lemon or orange peel. Smoke in a cold induction smoker with your favorite wood chips for 10 seconds.
Appetizers
Stuffed Giant Shrimp
Makes 8
8 4-6 Count Shrimp
16 slices of Italian Speck
16 thin sticks Manchego Cheese
16 Pickled Banana Pepper rings
8 sticks Fresh Pineapple
5 tbsp Maritime Madness Super BBQ Sauce
Directions
Working in batches. Peel the shrimp but leave the tail on. Bend the shrimp to break the back slightly to allow the skewer to keep it straight for ease of rolling. Lay your first piece of speck on the cutting board and place shrimp at a slight diagonal. Place a piece of cheese, pineapple, 2 peppers and the last slice of cheese on and in front of the shrimp. Roll the speck around to wrap keeping the skewer tight. Once wrapped. Place another piece of speck to start where the last piece finished and roll again. Continue until all shrimp are wrapped. Place on a cookie sheet lined with parchment paper. Drizzle Maritime Madness BBQ sauce on all Shrimp and place into a pre-heated oven at 410F for 12 minutes turning and redrizzling (not a word lol) half way through.
Spicy Tuna Nachos
Makes 12
12 Neal Brothers Deep Blue and Flax Tortilla Chips
5 oz. Sushi Grade Tuna
Sauce
¾ cup Light Mayonnaise
4 tbsp Maritime Madness Lime and Cilantro Hot Sauce
1 tbsp Walter Caesar Rim
½ Avocado chopped
¼ Red Onion chopped
1/8 cup Jose Cuervo Tequila
1 tbsp Butter (unsalted)
Pinch Onion Powder
Directions
In a skillet add butter on medium heat. Add onions and sauté for 30 seconds to cover in butter. Cover for 2 minutes on low. Sauté on medium without the cover and add tequilas to release the brownings. Allow to cool slightly. Mix remaining ingredients in a bowl. Add onion and stir until well combined. Spoon and divide sauce onto each of the nachos. Slice the tuna against the grain and place onto the sauce. Top with more sauce and serve with sliced hot pepper or additional hot sauce.
