How to make Homemade Meatloaf
What you will need for this recipe:
2lb 80/20 ground beef
½ onion, diced
1 cup bread crumbs
1 egg
1 tsp dried or fresh parsley
1 tsp garlic powder
1 tbsp Worcestershire sauce
Pinch of garlic pepper
2 tbsp plus ½ cup, ketchup
½ cup milk
Salt & pepper to taste
3 tbsp brown sugar
Splash of apple cider vinegar

SUSAN DISHES IT OUT - Not a creature was stirring...except Susan! Semi-vegetarian Meatloaf
Meatloaf:
WHAT YOU NEED:
2 lb “meat”: 1 lb ground turkey (raised without antibiotics, hormones, etc) + 1 lb vegetarian or grass fed ground beef – or your choice
1 medium onion, chopped
2 eggs
3 minced garlic cloves
4 T ketchup*
3 T chopped parsley
2 T brown sugar
1 ½ t Italian seasoning
2 T yellow mustard (I use Dijon)
½ t paprika (can used smoked)
½ t pepper
1 T olive oil
½ c bread crumbs (I use GF)
1/2 c milk or milk substitute (scant)
Opt: Finely chopped carrots, zucchini, & mushrooms. **
Glaze:
½ c ketchup
1 T brown sugar
1 T BBQ sauce (or worcestershire)
1 t yellow mustard
WHAT YOU DO:
Preheat over to 375 degrees. Grease a large baking dish & for good measure line with parchment paper.
Saute garlic, onions & veggies for 3-5 minutes in oil.
Stir meat together just enough with ketchup & mustard to combine without overdoing.
Beat eggs. Mix parsley & spices, then veggies.
Add to mixture, then stir in bread crumbs & milk. ???????
Form loaf in pan. Cook about 40 minutes. Then spread sauce on top & cook another 15-20 minutes.
Let cool & eat!
• If using vegetarian beef add another T or so of ketchup or BBQ sauce, as it’s drier than regular beef.
** This is a “sneaky” way to add in veggies & it actually enhances the flavor & certainly nutrition.
