MEXICAN BEEF SALAD ** Easy to make**
RECIPE BELOW :

Serves 4
400g butternut pumpkin, peeled and cut into 1cm cubes (I bought mine already cubed)
Olive oil
500g beef rump steak
35g packet taco seasoning
400g can red kidney beans, rinsed & drained
310g can corn kernels, rinsed & drained
1/2 cup fresh parsley, chopped
4 green onions, thinly sliced
1 lime
Boil water in pot and add cubed pumpkin pieces. Simmer for 5-6 minutes and drain, set aside.
Meantime, preheat the BBQ or chargrill pan. Rub seasoning to the meat on each side. Let it stand for a few minutes.
Spray BBQ or pan with oil lightly. Cook meat for 2-3 mins on each side, or cooked through as per your liking. Set aside and keep warm.
In a pan, add olive oil and fry gently the shallots (green onions) , add the red kidney beans, pumpkin, corn and leave for 2mins. Remove from heat. Place mixture in serving plate.
Slice the meat thinly and add it to the bean mixture. Add the parsley and mix well. Add a splash of lime juice before serving. Ready to serve.
Mexican Beef Salad
*Ingredients*
baby corn, beef, beef tenderloin, brown sugar, cherry tomatoes, coffee, lettuce, lime, olive oil, pepper, red onion, salt, sweet corn, yogurt, meat
*Recipe*
Add the salt, coffee, brown sugar, and pepper in a bowl.
Mix and use them to coat the beef.
Heat a skillet and add 1 tablespoon of olive oil. Start frying the beef.
Fry for about 3 minutes per side. Let it rest and slice it.
Chop the lettuce and start preparing the salad. Also slice the onion.
Separately, heat another skillet and add the sweet corn, baby corn, cherry tomatoes, and coriander.
Stir and leave them on heat for about 1 minute.
In a large bowl, add the salad, cooked veggies, and red onion.
Season with olive oil, lime juice, and salt.
Mix all together.
Serve with beef slices and 1 tablespoon of yogurt as a dressing.

Easy Taco Bowl For meal preps or dinner! ????
Taco Bowl with Corn Salsa
(Makes 2-3 Portions)
1 Lb Lean ground beef
1 Tbsp Olive Oil
3 cloves Minced garlic
1/3 cup chopped yellow onion
Jasmine Rice
2-3 Fresh corn cobs
2 Small roasted jalapenos diced
1 red bell pepper diced
handful of chopped fresh chopped cilantro
½ cup black beans
Homemade Taco Seasoning:
- 1 Tbs Chili
- ¼ tsp Garlic Powder
- ¼ tsp Onion Powder
- ¼ tsp dried oregano
- ¼ tsp red pepper flakes
- ½ tsp Paprika
- 1 ½ tsp cumin
- 1 tsp each salt and pepper
First roast your corn cobs and jalapenos on a sheet pan in the oven for about 5 min or until becomes toasty! Set aside to cool. (Once cooled cut the corn kernels off the cobb)
In a skillet over med-high heat add the garlic and onions. Let these cook for about 1-2 min until they become fragrant. Now add your beef and taco seasoning. Mix this all together really well. Once cooked through remove from the heat and set aside.
In a bowl combine the corn, chopped jalapeno, diced bell pepper, cilantro, salt, pepper, and chili seasoning. Give this a good mix!
