Mexican Street Corn Casserole

Two classics become one new dish! All your favorite Mexican Street Corn flavors baked into the
classic holiday dish, creamy corn casserole.

Cook Time: 45-50 minutes
Serves: 16
Ingredients:
1 (8 oz) package Kroger Cream Cheese, room temperature
1/4 cup unsalted butter, room temperature
1/2 cup sour cream
1/2 cup mayo
2 large eggs
1/2 cup half and half
1 (14.4 oz) bag frozen Birds Eye Sweet Kernel Corn
1 (8.5) oz box cornbread mix
2 tablespoons granulated sugar
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon cumin
1 1/2 teaspoons salt, more or less to taste
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne, optional - omit if you don’t like spice
Lime juice, for serving
Chopped cilantro, for serving
Chopped green onion, for serving
Crumbled cotija (or feta), for serving
Instructions:
1. Preheat oven to 350 degrees F and grease a 9x13” baking pan with cooking spray.
2. Place cream cheese, butter, sour cream, mayo, eggs, and half and half into a large bowl.
3. Beat together, using a hand mixer, until fully incorporated.
4. Stir in corn, cornbread mix, sugar, chili powder, smoked paprika, garlic powder, cumin, salt,
pepper, and cayenne.
5. Pour into prepared pan and bake until the mixture has set, about 45-50 minutes.
6. Serve with plenty of fresh lime juice, cilantro, green onion, and cotija!

Corn on the cob
4 tbsps melted butter
1/4 cup mayo
1/4 cup sour cream
1 package Cotija cheese
tajin or chili powder
1/4 cup cilantro
2 limes
All-Purpose Seasoning
1 tsp garlic
1 tsp white sugar
Directions:
Preheat oven or Grill to 400 degrees. Clean corn and brush with oil or melted butter. Season with salt, pepper, garlic, onion powder. Grill or bake for 10-15 minutes or until tender. If using the oven, place corn under the broiler for a few minutes to get some char.
Mix together the mayo, sour cream, lime juice, sugar, garlic, and season to taste. In a separate bowl, break apart the Cotija cheese and add some lime zest. Brush mayo mixture onto the corn and then spoon on the cheese. Top with Tajin or Chili powder and serve.
