Betty's Spicy Taco Meatloaf
Betty demonstrates how to make Taco Meatloaf. This meatloaf uses a Taco Seasoning mix from Betty's Kitchen, or you may used a packaged taco seasoning mix. Many thanks to Arritta Morris for the recipe.
Taco Meatloaf
1 egg
½ cup sour cream
1/3 cup salsa
3 to 4 tablespoons taco seasoning (from Betty's Kitchen—or a packaged variety)
salt, to taste
1 cup crushed tortilla chips
½ cup finely-shredded Cheddar cheese
1 ½ pounds ground beef
In a large bowl, beat the egg using an electric mixer on medium speed. Add all other ingredients, and stir mixture to combine. Form into a loaf and place in standard-sized loaf pan. (I lined the loaf pan with aluminum foil, folding it over the top.) Place the prepared, uncooked meatloaf in the refrigerator for 1 hour to let the flavors blend with the crushed corn chips. Bake at 350 degrees (F) for 1 hour, opening up the aluminum foil for the last 15 minutes. Remove cooked meatloaf from oven. Transfer meatloaf to a cutting board and let it rest 5 minutes. Slice as desired and serve on a nice platter. This meatloaf is great served with shredded lettuce, chopped tomatoes, and sliced avocados. I hope you love it! --Betty

INGREDIENTS
2 lbs 85/15 ground beef
1 envelope of beefy onion soup mix
1 sleeve of Ritz crackers
1/4 of a medium-sized bell pepper
1 tsp garlic powder
1 tsp paprika
1/4 cup ketchup
2 Tbsp fresh parsley
1 tsp cracked black pepper
2 large eggs
1/2 cup whole milk
SAUCE
1 cup ketchup
1/4 cup A-1 steak sauce
2 Tbsp dark brown sugar
1 Tbsp diced chipotle peppers in adobo sauce
1/4 tsp cracked black pepper

Mexican Meatloaf ????
6 Servings; Per Serving:
1 lean protein
1/6 green
2.5 condiments
Add a salad and/or 2-3 servings of veggies to make up the rest if you are on plan!
Ingredients:
2 and 1/4 lbs. 95% to 97% lean ground beef (4 - 3/4 Lean)
1/2 cup egg beaters (1/4 Lean)
1 tsp chili powder (2 Condiments)
1/2 tsp ground cumin (1 Condiment)
1/2 tsp salt (2 Condiments)
2 cloves freshly minced garlic (2 Condiments)
1/2 cup salsa (8 Condiments)
1 cup reduced fat Colby and Monterrey jack cheese, grated (1 Lean)
4 oz diced green chili peppers (1 Green)
Directions:
Pre-heat oven to 375° F.
In a large bowl, mix the ground beef, egg beaters and spices together.
Cut a large square of waxed paper and roll out the ground beef mixture into a flat square. Sprinkle with half of the cheese and the green chili peppers. Roll the waxed paper, with the meatloaf in the middle, until it shapes into a loaf. Carefully unfold the waxed paper from the meatloaf and remove. Fold the ends of the meatloaf to the cheese and chilies will not spill out during cooking.
Place in a loaf pan. Top with salsa. Bake in oven at 375° F for 50 to 55 minutes or until done.
Sprinkle other half of cheese on top and bake an additional 10 minutes or until cheese is melted.

EASY MEXICAN MEATLOAF RECIPE This is the best Mexican meatloaf recipe with salsa! It is juicy, delicious, and this recipe is super easy to make. This recipe is packed with incredible flavors from taco seasoning, red salsa, melted cheddar cheese, and fresh cilantro. Also, we have lightened it up by using ground turkey breast. Mexican Meatloaf
Ingredients:
2 lbs ground beef
1 cup picante sauce (2/3 cup in loaf and 1/3 cup on top)
1 cup bread crumbs
2 eggs slightly beaten
Directions:
Combine all ingredients except for 1/3 cup of Picante sauce
Form into a loaf and place in greased pan
Top with remaining 1/3 cup Picante sauce
Bake at 350 degrees for 1 ½ hour (mine cooked in 1 hour 15 min)
Optional -- you can top the meatloaf with more picante sauce or any of your favorite Mexican toppings.
Serve and Enjoy !!!
