How To make Molasses Shoo Fly Cake
1 x *pastry
1 x *liquid:
1/2 c Molasses
1 ea Egg yolk, well beaten
1/2 T Soda
1 x *dissolved in:
3/4 c Water, boiling
1 x *crumbs:
3/4 c Flour
1/2 c Brown sugar
2 T Shortening
1/8 t Nutmeg
1/8 t Ginger
1/8 t Cloves
1/2 t Cinnamon
1/4 t Salt
Combine the ingredients for the liquid part mixing well. Combine the dry ingredients for the crumbs, working in the shortening. Line a pie pan with pastry. Make alternate layers of crumbs and liquid. Top with crumbs and bake at 450-F until crust edges start to brown. Reduce heat to 350-F and bake until firm (about 20 minutes). Shoo Fly Molasses Cake
4 cups White flour (I used whole wheat pastry flour with good results)
2⅔ cups Brown sugar (brown sugar is white sugar with molasses added. For me, that molasses overkill so instead I used Coconut palm sugar)
1 cup Butter
Pinch of salt
2 cups Boiling water
1 cup Molasses (any kind of molasses will work but again, to avoid molasses overkill, I used a mild flavor)
2 teaspoons Baking soda

The sweet molasses custard in this wet-bottom shoofly pie is wonderful with the warm spices used in the topping. The technique of sprinkling the crumbs over the very wet filling results in a great pie with a gooey center and a crumbly topping. SUBSCRIBE TO FOOD52 ►►

INGREDIENTS
1 egg yolk
1/2 cup unsulphured molasses
3/4 cup boiling water
1 teaspoon baking soda
1 cup unbleached flour
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon ground cloves
1/2 cup brown sugar, lightly packed
1/2 teaspoon salt
2 tablespoons room temperature butter
1 9-inch pie shell, unbaked

Lebanon PA, 6.23.2020: Welcome back to Jo Ellen's Kitchen in Central Pennsylvania. Today, she's making PA DUTCH CHOCOLATE SHOOFLY CAKE
Ingredients:
• 4 cups flour
• 2 cups sugar (1 cup white, and 1 cup brown)
• 1 cup shortening
• 2 teaspoons baking soda
• 2 cups hot water
• 1 cup molasses
• 1 teaspoon cinnamon
• ½ teaspoon ginger
• 2 cups semi-sweet chocolate morsels (12oz package)
Instructions
1. Preheat oven to 350 degrees F.
2. Combine flour, sugar, cinnamon, ginger & shortening for crumbs; reserve 1 cup.
3. Dissolve soda in water, stir in molasses. Combine mixture with crumbs.
4. Pour chocolate chips into a greased 13x9 pan. Pour batter over top of the chocolate chips. Sprinkle with reserved crumbs.
5. Bake 30-40 minutes or until a toothpick comes out clean.

1935 Neversink Molasses Pie Recipe - Old Cookbooks Show
Today we do another old cookbook recipe from a 1935 depression era Pennsylvania Dutch cookbook.
Ingredients:
1 cup molasses
6 tablespoons brown sugar
½ lemon (rind only)
3 tablespoons flour
1 teaspoon cinnamon
1 cup bread crumbs, fine
1 cup seedless raisins
6 tablespoons flour
4 tablespoons brown sugar
2 tablespoons shortening
Method:
Line a pie pan with pie crust. Spread over it the bread crumbs, and over these the raisins. Then place all the rest of the ingredients listed in the first column (molasses, brown sugar, lemon, flour, cinnamon) above, and mix. Pour this mixture over the pie. Then mix, in a second bowl, the ingredients listed in the second column above (flour, brown sugar, shortening). Make into fine crumbs with fingers. Spread over the pie. Then make inch wide strips of pie -crust and spread them criss-cross over the pie. Bake in a slow oven.
