How To make Mom's Banana Loaf
1/2 c Butter or margarine
; (1 stick) softened 3 md Bananas; (1 cup mashed)
2 lg Eggs
2 c All-purpose flour
1 c Granulated sugar
1 ts Baking soda; dissolved in
2 tb Hot water or sour milk; or
1 tb Baking powder
Recipe by: St. Louis Post-Dispatch 3/3/97 Preheat oven to 350 degrees. Grease and flour one 9-by-5-inch loaf pan or three 5-by-3-inch loaf pans.
In large mixer bowl, beat together butter and bananas until combined; beat in eggs, one at a time. In medium bowl, stir together flour and sugar (and baking powder, if using). Add to banana mixture. Mix only to combine. If using baking soda and hot water, add and combine. Bake large loaf 45 to 55 minutes, smaller loaves 35 to 45 minutes. Bread is done when toothpick inserted in center of loaf comes out clean. Variations: Add one of the following to batter: 1/2 cup walnuts or pecans, chopped; 1/2 cup raisins; 1/2 cup chocolate chips; 1 medium tart apple, chopped coarsely. Stir briefly to combine. Grandma’s Ultra Moist Banana Nut Bread Recipe - Absolute Best Banana Bread Recipe
Ingredients:
•6 overripe (not rotten) bananas
•2 1/2 cups sifted all purpose flour
•1 tsp salt
•2 tsp baking soda
•1 cup oil
•2 cups sugar
•4 eggs, beaten well
•1/2 - 1 cup chopped walnuts (just use as much as you prefer)
Preheat oven to 350°
Grease 2 loaf pans
Cream sugar and oil together
Add eggs and beat well
Add mashed bananas
In a separate bowl, sift together dry ingredients
Fold dry ingredients into batter - Do not use the mixer for this
Stir in chopped walnuts
Pour batter into loaf pans and bake for 50-60 minutes
BEST Banana Bread Recipe - my Mom's recipe!
This is the BEST Banana Bread Recipe ever – it’s an easy moist banana bread that’s my mom’s recipe. Make this plain or with chocolate chips or walnuts – it’s such a simple classic and the BEST recipe!

INGREDIENTS
1 cup granulated sugar plus more for the pan
1/2 cup salted butter softened (plus more for the pan)
2 medium tired bananas brown spotted
2 large eggs
7 tablespoons sour milk see note
1 teaspoon baking soda
2 cups flour spooned and leveled
1/2 cup chopped nuts or chocolate chips, optional
INSTRUCTIONS
Preheat oven to 375°F. Grease a 9x5x3” loaf pan with butter and coat it with sugar. (You do this like you would grease and flour a pan. Grease it first, then add about 2 tablespoons sugar to the pan and move the pan side to side until the bottom and sides are coated with sugar. Do NOT substitute cooking spray for the butter. You can skip the sugaring and just use cooking spray, if you wish.)
Cream butter and sugar with a hand mixer. Set aside.
Add bananas, eggs, milk, and baking soda to a blender jar and blend until smooth.
Pour half the banana mixture into the butter mixture with 1 cup of flour. Mix with hand mixer until just incorporated, then add the remaining banana mixture and flour. Mix until just incorporated. Stir in nuts if using them. Pour into prepared pan.
Bake for 50-60 minutes until a toothpick comes out with just a few crumbs. The edges will be a dark brown and there will be a nice crack down the center.
Cool completely before removing loaf from pan, but you can cut slices from the pan after it’s cooled for about 15-20 minutes.
RECIPE NOTES
In place of the sour milk you can use:
1 teaspoon vinegar + 7 tablespoons milk or nonfat milk
1 teaspoon vinegar + 7 tablespoons nondairy milk
7 tablespoons buttermilk

Mom's Banana Bread - Delight Of The Bite
Everyone has their go-to Banana Bread recipe and this is most definitely mine. I'll show you the fastest way to whip up a batch of this timeless treat in your...food processor!! Of course it could be mixed by hand but there's something about dumping all the ingredients in and with a few pulses of the button...BOOM...you've got your batter ready to go! (NOTE: My food processor is a 7 cup capacity...so it's smaller than many that are more current...mine is almost 20 years old).
Here's what you need to know...
Preheat your oven to 350 degrees
2 large overripe bananas - peeled and broken into chunks (I sometimes will do three smaller sized bananas)
1/2 cup (1 stick) butter -- at room temperature
Pulse these two ingredients until well combined. From here, it's super simple. Measure and add the following...
3/4 cup sugar
1 1/2 cup ap flour
2 eggs
1/4 cup milk
2 tsp lemon juice (you can substitute white vinegar if you don't have lemon)
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon (plus a few shakes on top of the batter before you bake it)
Give the food processor a few 5 second long pulses. Scrap down the sides and pulse a couple more times and you're ready to go!
From here, if you want you can add 1 cup of mini chocolate chips, 1/2 cup shredded coconut, and/ or 1/2 cup chopped nuts of your choice. I'm partial to the mini chocolate chips as they're the perfect ratio of chocolate to bread and they distribute really well within the batter.
Place the batter into a greased 9 x 5 inch loaf pan and bake until done...about 55-60 minutes. You can also make 4 mini loaves but bake those from only 30-35 minutes. Don't forget to top the loaf/s with a dash of cinnamon! :-)
This recipe also freezes really well. ENJOY!!!!
