How To make Mother's Scotch Shortbread (Christmas)
2 c Flour
1/4 ts Salt
1/4 ts Baking powder
1/2 c Powdered sugar
1 c Butter
Oven 325~. Mix butter and sugar until creamy. Add sifted dry ingredients. Chill until easy to handle. Roll out to 1/4" thickness on lightly-floured board or wax paper.
Cut into desired shapes (I have a bird cutter and Christmas tree). Bake on ungreased sheet at 325~ for 10 to 15 minutes. Cookies may be sprinkled with
colored sugars before baking, if desired.

You will Need
50g / 2oz of Superfine / Castor Sugar
100g / 4oz of Butter
150g / 6oz of All purpose / Plain Flour
( You can use 50g of Rice or Corn Flour and 100g of Flour)
150'C / 300'F for 20 - 25 minutes

Great Great Grandma’s Shortbread
Ingredients
1 pound butter 450 g
4 cups of flour 480 g
1 cup of icing (powdered sugar) sugar or fruit sugar 130g
please recheck the conversion of the ingredients from imperial to metric on the net to make sure they are correct
Instructions
Mix slightly softened butter with flour and sugar. Knead the dough until it’s smooth and begins to crack. Roll out the dough to about ¼ inch thick. Cut with cookie cutter or press into a shortbread mold. Bake in a slow oven 325F (163C) on the middle rack until delicately tanned on the edges maybe 8-10 minutes.. Be super careful not to burn them. Enjoy!

SCOTTISH SHORTBREAD RECIPE
320g or 2 -2.5 CUPS AP FLOUR
110g or 1/2 CUP WHITE RICE FLOUR
110g or 1/2 CUP SUGAR
220g or 2 STICKS COLD BUTTER(16 TBSP) (cut into small cubes or grated on box grater)
3g SALT or 1/2 tsp
1. Combine flour, rice flour, butter, sugar, and salt in bowl of stand mixer or in medium mixing bowl
2. Mix on low speed for 3-4 minutes or until butter and flour are pebble like
3. Mix on medium speed for 10 more minutes or about 15 minutes in total or until dough is formed and is clearing the bowl as shown in video.
4. Once mixed, move dough over to half sheet pan lined with parchment paper
5. Press shortbread dough into a rough 9x7 or 20x17cm rectangle (roughly)
6. If you'd like perfect rectangles, perforate as shown in video, then score with fork
7. Bake at 275F or 135C for 45 mins to 75 mins depending on how crunchy you'd like.
45 mins will be soft and light, 75 mins will be crunchy and golden.
8. Take out and let cool 10 mins.
9 Cut along perforations while still hot...serve
CHOCOLATE CHIP SHORTBREAD VARIATION
320g or 2-2.5 CUPS AP FLOUR
110g or 1/2 CUP WHITE RICE FLOUR
55g or 1/4C. SUGAR
55g 0r 1/4C. BROWN SUGAR
3g or 3/4tsp VANILLA EXTRACT
220g or 2 STICKS (16 TBPS) COLD BUTTER (cut into small cubes or grated on box grater)
3g or 1/2 tsp SALT
115g or 4 OZ 70% CACAO CHOCOLATE
Follow recipe as before, add chopped chocolate after dough is clearing bowl.

2 sticks softened unsalted butter
2 cups flour
¾ cup confectioners sugar
1/8 tsp salt
Preheat oven to 325 degrees . Spray pan with cooking spray and set aside.
Mix all ingredients by hand, place in pan or mold. Bake 35-45 minutes.
Shortbread should be light golden. Cool 15 minutes, cut while still warm.

Hey guys :)
I thought I'd quickly pop on and show you how to make traditional Scottish Shortbread! A few of you have asked for it...so here it is! This is just the basic recipe, but you can add things like chocolate chips, coconut, nuts or flavourings :) But I like plain. I've listed the ingredients below if you wan't to give it a go!
