Ingredients:
Cake:
•2 cups all purpose flour
•2 cups sugar
•2 teaspoons cinnamon
•1 teaspoon baking soda
•¼ teaspoon salt
•1 ½ cups vegetable oil
•4 eggs
•3 cups shredded carrots
Frosting:
•8 ounces softened cream cheese
•1 stick softened, unsalted butter
•1 pound (4 cups) powdered sugar
•2 teaspoons vanilla extract
Directions:
Cake:
•Preheat an oven to 350 degrees.
•Grease two round, 8 inch cake pans.
•In a bowl, whisk together the all purpose flour, sugar, cinnamon, baking soda and salt.
•Whisk in the vegetable oil and eggs until fully incorporated.
•Using a spatula, mix in the shredded carrots.
•Evenly divide the batter into the prepared cake pans and spread the batter in each pan to make even layers.
•Bake in a 350 degree oven for 45 minutes, or until a toothpick inserted in the middle comes out clean.
•Allow to cool to room temperature before frosting.
Frosting:
•Using a stand mixer with the paddle attachment, cream the softened cream cheese and softened unsalted butter until fully combined.
•Mix in the powdered sugar until fully incorporated.
•Mix in the vanilla extract until combined.
Assembly:
•Put a small amount of frosting in the center of a cake board.
•Remove the first layer of the cake from a cake pan and place it on the cake board.
•Spoon the frosting onto the top of the first layer and spread evenly.
•Remove the second layer of the cake from a cake pan and place on top of the first, frosted cake layer.
•Spoon the frosting onto the top of the second layer and spread evenly over the top and sides of the cake.

White Cake Recipe

Ingredients:
•6 large eggs, room temperature
•¾ cup milk, room temperature
•1 tablespoon vanilla
•2 ⅔ cups cake flour
•1 tablespoon baking powder
•2 ¼ cups sugar
•1 teaspoon salt
•3 sticks unsalted butter, softened
Directions:
•In a medium bowl, combine eggs, milk and vanilla.
•Whisk until all egg yolks are broken apart and mixture is fully combined.
•In a large bowl of a stand mixer, stir together cake flour, baking powder, sugar and salt.
•Slowly add the chunks of butter to the flour mixture.
•Combine until mixture resembles coarse sand, or pebbles.
•Slowly add some of the milk mixture, leaving approximately ¾ cup in the bowl.
•Mix on low until combined.
•Once combined mix on high for 5 minutes to make sure everything gets incorporated.
•While the mixer is working, preheat the oven to 325 degrees.
•Grease the bottoms and sides of three 10 inch cake pans with pan grease.
•Gradually add the last ¾ of a cup of the liquid mixture, until just combined.
•Pour the batter into the prepared pans.
•Bake for approximately 27 minutes, or until a toothpick inserted in the middle comes out clean.
•Once the cakes are cooked, allow to cool thoroughly before frosting.
Vanilla Buttercream Icing Recipe

Ingredients:
•4 tablespoons heavy cream
•1 teaspoon salt
•1 teaspoon vanilla
•6 sticks unsalted butter, softened
•5-8 cups powdered sugar
Directions:
•In a small bowl, whisk together heavy cream, salt and vanilla.
•Allow the salt to dissolve.
•In a large bowl of a stand mixer, fitted with a paddle attachment, cream together the butter.
•Add the powdered sugar, starting with 5 cups. Add the powdered sugar until the mixture resembles coarse sand.
•Add the heavy cream mixture.
•Mix on high for 10 minutes or until icing becomes of a spreading consistency.
White Cake Assembly

Ingredients:
•3 white cake layers
•vanilla buttercream icing
Directions:
•Place one layer on a serving plate or cake board.
•Spread about 1 cup icing over the surface of the cake.
•Top with a second cake layer.
•Spread another cup of frosting over the surface of the second cake layer.
•Place the last cake layer on top of the cake.
•Spread the remaining frosting on the top and sides of the cake.
