How To make New South Venison Steak
1/4 cup flour
3/4 tablespoon salt
1/8 teaspoon cayenne
1 dash thyme
1 dash ground nutmeg
1 dash ground cloves
1 pound steak (cut from venison rump)
2 tablespoons melted beef suet
3 large onion
thinly sliced
2 cups tomato :
peeled and quartered
1 1/2 tablespoons Worcestershire sauce
4 drops Tabasco sauce
1 1/2 cups Burgundy
1 whole clove
1/2 small garlic clove
Bouquet garni 1 cup mushroom caps -- sauteed
salt and pepper to taste
Sift flour w/salt, a few grains of cayenne, thyme, nutmeg and cloves. Vigorously pound this seasoned flour into venison steak. Cut the steak into 1 in. cubes. Heat melted beef suet in a heavy stewpot or Dutch oven and sear venison on all sides, adding thinly sliced onions to the pot. When meat and onions are well browned, add tomatoes, Worcestershire sauce, tabasco, burgundy, clove, garlic, and bouquet garni. Cover pot closely, set in moderate oven, and cook 1 1/2 hrs. or until meat is tender. Add salt and pepper to taste and bring to a boil over direct heat. Stir in sauteed mushroom caps and serve with wild rice and red currant jelly.

Deer Camp: Venison with Red Wine Onion Sauce
It's deer season and I bet you're looking for a good deer/venison recipe. This is one of my favorites because the red wine tenderizes the deer and also creates a great flavor. The wine also breaks down some of the gamey flavor that deer can sometimes have. Hope y'all enjoy.
Venison in Red Wine Onion Sauce
1 cup beef broth
1/2 cup green onion, diced
1/2 cup yellow onion, diced
1 tsp celery salt
2 tsp garlic, minced
1/2 tsp sea salt
1 cup red wine
2 tbsp. butter
2 tbsp. flour
Venison steaks (tenderloin, rib eye, etc.)
salt/pepper
2 tbsp. canola oil
1. Preheat the oven to 350 degrees F. Place a cast iron skillet in the oven.
2. Pour the beef broth in a saucepan over medium-high heat. Add the green onions, yellow onions, celery salt, garlic and sea salt. Bring the mixture to a hard simmer for about 3 minutes, stirring occasionally.
3. Stir in the wine and let simmer for about 3 minutes, stirring occasionally.
4. Meanwhile, melt the butter in a small skillet over medium-high heat. Add the flour and continue stirring until the mixture thickens slightly.
5. Add the flour mixture to the red wine sauce and cook 3-5 minutes or until the mixture thickens slightly. Remove from the heat and cover.
6. Rub both sides of the venison steaks generously with salt and pepper.
7. Remove the cast iron skillet from the oven and place over high heat. Add the oil. Sear the steaks about 1 1/2 to 2 minutes per side.
8. Reduce the heat to medium and pour the wine sauce over the venison. Cook an additional 3-4 minutes, basting occasionally. Serve warm with additional sauce on top.

Venison Steaks - Honey & Balsamic Recipe by LiveLean
Being South African, one of my favorite things to do is have a BRAAI! This is my favorite go-to marinade and healthy recipe for braaing Klein Karoo venison steaks. Venison is a healthier meat alternative for it's leaner, lower in cholesterol and generally better for you.
Ingredients:
500g Klein Karoo Venison Steaks
1/2cup balsamic vinegar
4tbs olive oil
4tbs honey
1tbs dry mustard
1tbs basil leaves
salt and pepper to taste
Instructions:
Place the steaks into a deep bowl
Add all the ingredients and coat the meat
Leave to marinate for 2-4 hours before they go on the braai
Braai for 15 minutes
