Cabbage Noodles and Sausage
Ingredients
• 12 ounces kielbasa or sausage sliced
• 2 tablespoons olive oil divided
• ¼ cup salted butter
• 1 large onion diced
• ½ head cabbage chopped (approx. 6-7 cups)
• 1 clove garlic minced
• ⅔ cup frozen peas
• 2/3 cup frozen corn
• 1 can diced tomatoes 14 oz.
• 8 ounces uncooked egg noodles
• salt and fresh ground black pepper to taste
Instructions
• Cook noodles according to package directions, drain and set aside.
• In a large saucepan, heat 1 tablespoon olive oil. Cook sausage until lightly browned.
• Add remaining olive oil, butter and onion. Cook until softened, about 5 minutes.
• Add cabbage and garlic. Cook until tender (10-15 minutes). Stir in peas, corn, noodles, tomatoes and salt & pepper. Cook 2-3 minutes or until heated through.

10 Minute Cabbage Udon Noodles #Shorts | SO VEGAN
You might have spotted we’re going through a bit of a ‘noodle’ moment right now. Noodles are one of our go-to speedy meals - and this cabbage udon dish is total winner with toasted cashews and crunchy cabbage. Enjoy!
Serves 2
???? 40g (1.4oz) cashews, roughly chopped
???? vegetable oil
???? 2 shallots, peeled + sliced
???? 1/4 cabbage, chopped (see notes)
???? 3 spring onions, sliced
???? 3 garlic cloves, peeled + chopped
???? 300g (10.6oz) udon noodles, we use quick cook noodles (see notes)
???? 1 tbsp light soy sauce
???? 1.5 tbsp dark soy sauce
???? 2 tbsp maple syrup
???? 1 tsp toasted sesame oil
1️⃣ Heat a wok or pan on a medium-high heat. Throw in the cashews and toast for 2 minutes until golden. Then transfer the cashews to a plate and drizzle a little oil in the wok.
2️⃣ Add the shallots and fry for 2 minutes.
3️⃣ Then add the cabbage and fry for another 2 minutes.
4️⃣ Add the spring onion and garlic and fry for 1 minute.
5️⃣ Now throw in the noodles and cashews from earlier, followed by the light soy sauce, dark soy sauce, maple syrup and sesame oil and stir until combined and hot. Then serve.

Notes:
✏️ We use straight-to-wok style udon noodles, also known as ‘quick cook’ noodles, which only require minute in a hot pan to cook through. Alternatively you can use dry noodles and cook them separately in a pot of hot water, then drain them and add them to the wok.
✏️ We use regular green cabbage, which is the most common variety you’ll find in supermarkets. But you can also use Chinese cabbage (also known as napa cabbage) or even Savoy cabbage.
✏️ You can always throw in any other veggies you might have lying around. Courgette, carrot and mushrooms will work really well in this recipe too.

This stir-fried cabbage and glass noodles (tang hoon or bean vermicelli) with eggs dish is a simple Chinese vegetable stir fry. We planned to serve this with rice, but we ended up eating it on its own. This dish only takes about less than seven minutes to cook. We recommend that you prepare all of your ingredients ahead of time so that you don't have to scramble for them while cooking.

Cabbage and Noodles (Káposztás Tészta)
This is simple but delicious comfort food made with just a few ingredients. Earlier it was the poor man's food as cabbage and pasta has always been available, but it's still a favorite dish in Hungarian households. We usually eat this as a main course, but it's also a great side dish for roast duck.
The key thing to make this food right is to caramelize the cabbage slowly until it's sweet, soft and dark brown. (it's not a problem - or even better if it over-browns in a few places)
There are two way to eat this: seasoned with salt and lots of black pepper, or with confectioners sugar sprinkled over. (I prefer the first one :D)
Ingredients (for 4-6)
2 lb (900 grams) cabbage (outer leaves removed)
1 lb (450 grams) dry noodles (square shaped)
1 tbsp salt
4 tbsp vegetable oil
2-3 tbsp sugar
freshly ground black pepper
Optional:
Confectioners sugar for serving
1. Cut the cabbage head into quarters, leaving the core in. (it'll help to hold the cabbage leaves together while grating)
2. Grate the cabbage with a grater or you can use a chopper /in that case, remove the core and chop the cabbage into pieces/
3. Sprinkle the grated cabbage with salt, mix with your hands and set aside for 25-30 minutes until it releases its juices.
4. Squeeze the water from the grated cabbage and reserve the juice for later use.
5. Heat the oil in a large pan, add the sugar, stir it well then caramelize it on medium-low heat
6. When the sugar is nicely browned add the cabbage into the pan and stir them together. Pour in a little from the reserved juice then mix well.
7. (Don't panic if you see the caramelized sugar becomes solid again from the cold cabbage- it'll dissolve during cooking)
8. Cover the pan and cook on low heat for about 30 minutes – don't forget to stir it sometimes!
9. Meanwhile cook your noodles in boiling salter water according to your packet instruction.
10. Drain it in a colander then wash it under cold running water. Let it drain.
11. Remove the lid from the pan and continue to cook the cabbage until all the liquid has evaporated, and the cabbage is soft and dark brown. Season it with lots of freshly ground black pepper.
12. Now, add the cooked noodles and gently stir them together (while the pan is still on low heat). Mix until the cabbage and the noodles are well combined.
13. It's ready! Serve it with more ground black pepper, or if you have sweet teeth sprinkle some confectioners sugar on top.

Today I would like to cook for you a guilt and gluten-free pasta made from cabbage! The beautiful cabbage will be like tagliatelle and will be combined with a gorgeous tomato sauce along with delicious minced meat. It's a recipe I've developed and make whenever I want to lose weight or do a carbohydrate-free diet.

200 gr minced meat
1 large onion, diced
Salt
1 tablespoon butter
Grated nutmeg
2 cloves garlic, sliced
1/2 tablespoon butter
1 tablespoon olive oil
200 ml tomato puree
250 ml tomato juice
2 pinches sugar
1 tablespoon vinegar
8 tablespoons beef stock
1 teaspoon oregano
Salt & black pepper
500 gr white cabbage, cut into strips
2 tablespoons olive oil
1 clove garlic, sliced
Parsley, chopped
Parmesan, grated
Black pepper
• Heat a large frying pan on high heat.
• Add the minced meat to the pan and spread with a wooden spoon. But do not stir all the time. Let one side to brown, then stir again. You can also use pork, veal, or lamb.
• Add the onion, turn the heat to low and continue sautéing.
• Stir time to time for about 15 minutes. Minced meat will get perfectly brown, and onions will almost disappear in the pan.
• While cooking, add butter and salt to your taste.
• When cooked, add black pepper, and grate the nutmeg.
• Meanwhile, heat a wok pan, add the olive oil, and sauté the cabbage.
• While sautéing the cabbage, the heat should be high and pan should be large to have crunchiness.
• Add the garlic to increase the taste and continue to sauté.
• Cook the cabbage for around 5 minutes on high heat until they get a brown crisp.
• When cabbage comes to al dente stage take out to a plate.
• To the same pan add butter, garlic, and olive oil.
• Add the tomato puree and juice.
• To reduce the acidity, add sugar and vinegar.
• Add brown stock then season with oregano, salt, black pepper and simmer a bit.
• Pour some sauce to the minced meat and cook a little. If minced meat sticks to the pan, scrub the bottom with a spatula so you won’t waste any amazing flavour.
• Combine the cabbage with minced meat and transfer to the plate.
• Garnish with parsley, grate some parmesan, sprinkle some black pepper and it’s ready to eat.
