Ingredients -
Chicken & Seasoning -
1 Tbsp (20ml) - Olive Oil
2-3 - Chicken Breast, Butterflied & Halved
1 1/2 tsp (4g) - Onion Powder
1 1/2 tsp (4g) - Garlic Powder
1 Tbsp (14g) - Unsalted Butter
Salt & Pepper
Creamy Mustard Sauce -
1 Tbsp (20ml) - Olive Oil
1 - Brown (Yellow) Onion, Diced
6 - Garlic Cloves, Grated
1/2 Cup (125ml) - Wine or Chicken or Vegetable Stock (Alcohol Substitute)
1 1/2 Tbsp (30g) - Dijon Mustard
1 Tbsp (20g) - Wholegrain Mustard
1 Cup (250ml) - Thickened Cream
5g (0.2oz) - Fresh Thyme, Picked & Chopped
5g (0.2oz) - Fresh Parsley, Roughly Chopped
3g (0.1oz) - Fresh Tarragon, Picked
Seasoning To Taste
Mashed Potato -
1kg (2.2lbs) - High Starch Potatoes, Peeled and halved
3/4 Cup (180ml) - Full Fat Milk
50g (1.7oz) - Unsalted Butter, Cubed
Seasoning To Taste
Recipe Notes -
If using dried herbs instead of fresh use 1 tsp of both parsley and tyhme and 1/2 tsp tarragon.
This recipe can be made with chicken thigh instead of chicken breast. Sear the thighs for 6 minutes on each side then continue the recipe as per normal.

Tuna Pasta Bake | With Mustard Sauce
I used to make this a long time ago, but in the form of a lasagne. This simplifies recipe takes just 40 minutes and serves 2 people easily, with leftovers. The sauce is quite strong and rich, so you can add vegetables to it if you wish.
4 tbsp butter
1 large red onion chopped roughly
3 tbsp plain flour
400ml non fat milk
200 grams of tuna chunks flaked after draining
2 tbsp hot English mustard
1 tbsp whole grain mustard
2 cups of grated cheddar cheese
250gms of cooked penne pasta
Salt for pasta water
Ground black pepper

Creamy Mustard Sauce
A simple creamy sauce made with mustard and cooking cream. This sauce is ready in no time at all and is the perfect sauce to go with pan-fried pork chops (check out the video here), boiled potatoes, or chicken schnitzel (video here:
The sauce contains simple ingredients: onions, garlic, white pepper, cooking cream, butter, and some parsley and garlic chives. In the absence of cooking cream, you can use heavy cream or you can make a roux and then add milk.

Chilli Mustard Cheese Spaghetti
This is a great recipe for those who like their cheese sauce, spicy tangy and ofcourse cheesey....
Recipe
Spaghetti
1 small onion
2 green chillies (hot ones)
1 garlic clove
2tsp butter
2tsp plain flour
1 n 1/4cups milk
Salt and pepper
2 and half tsp dijon mustard
2 cheese slices/ or any cheese of your choice
Red chilli flakes
Parsley
Bread to serve
Method
First dice your onion and slice garlic and green chilli as shown.
In a heavy bottom pan, take 10cups of water and boil it. Once it comes to a rolling boil, add 1/4cup salt. Now add spaghetti and cook for precisely 9mins to achieve al dente texture.
In a sauté pan, add 2tsp butter, once melt but not very hot, add garlic and fry it, don't let it brown, now add green chillies and sauté until aromatic, then add onions and let it cook until translucent.
Now add 2tsp plain flour and cook well until it turns to golden brown. Then add 1/4cup milk and whisk until there are no lumps and its thickened. Then add 1 cup milk more and cook for 5-6 mins on low heat until it starts to thicken and doesn't taste floury.
Now season your béchamel sauce with salt, pepper and dijon mustard. Once you are happy with your seasoning, add as much cheese as you want. Now your sauce is ready, its time to add cooked spaghetti with some pasta water and toss it around until beautifully coated.
Garnish with red pepper flakes and parsley.
Serve with your choice of bread.

Chicken & Marinade -
700g (1.5lb) - Chicken Thigh (Can be substituted for chicken breast)
100g (3.5oz) - Honey (I used Manuka Honey)
85g (3oz) - Wholegrain Mustard
22g (0.7oz) - Dijon Mustard
5 - Garlic Cloves, Minced
Salt & Pepper To Taste
Remaining Ingredients -
250g (8.8oz) - Streaky Bacon, Diced
5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped
5g (0.2oz) - Thyme, Roughly Chopped
125ml (4.2floz) - Chicken Stock
400ml (13.5floz) - Full Fat Cream (Whipping Cream/Heavy Cream)
Storage & Reheating Instructions -
To store this, place it into the fridge in an airtight container for up to 3 days and it can be frozen in an airtight container for up to 3 months.
To reheat from fresh, place it into a pan over medium heat and gently heat it until hot. Note, I recommended adding a splash of fresh full fat cream to help prevent the sauce from splitting.

Serving Ideas -
This dish is fantastic served with rice, salad, pasta, and vegetables. It can also be eaten on its own.
