Rice Porridge Pancakes
Easy recipe for delicious pancakes with rice pudding
These pancakes made with rice porridge are a delicious and filling way to use up leftovers! Enjoy for breakfast and serve with jam, or any other topping you prefer!
INGREDIENTS
350 g rice porridge
2 eggs
2 tbsp all purpose flour
1 tbsp sugar
1 tsp vanilla sugar
Mix all the ingredients for the dough in a bowl.
Heat a pan with some oil.
Make small patties on the pan.
Let them fry for 1 minute on each side.
Serve with jam and almond flakes.
Enjoy!

Ingredients:
2 ripe bananas
2 eggs
2/3 – 3/4 cup rolled oats
2/3 tsp baking powder
1/4 tsp cinnamon
1/2 tsp vanilla extract
Pinch salt
1-2 tsp coconut oil or other oil for cooking
Maple syrup to serve (optional)
Method:
1. Place rolled oats in a food processor and process to flour.
2. In a large bowl, mash bananas, add eggs, beat until smooth mixture. Add vanilla extract, cinnamon, salt, oatmeal flour and baking powder. Stir until well combined.
3. Heat skillet over medium heat. Melt 1 tsp coconut oil. Pour batter into the skillet and cook 1-2 min. flip the pancake and cook 1-2 min more.
4. Drizzle with maple syrup.

Rice pancakes
Portions serving: 4-5 pax
Preparation time: 10 hours for rice to soak.
Cooking time: 30 mins
Ingredients
Rice 1 cup
Water as required
Salt ½ tbsp
Ginger ½ inch
Green chilli 2 pcs
Potato boiled 2 pcs
Suji 2 tbsp
Eno 1 tsp
Onion ½ cup
Carrot grated ½ cup
Capsicum chopped ¼ cup
Coriander chopped 1 tbsp
Oil 2 tbsp
Sesame seeds 1 tbsp
Method
Wash rice and soak it in water overnight.
Then, strain the water and transfer it to a mixer jar.
Add ginger, salt, green chilli, boiled potato and little water. Grind to a smooth batter.
Transfer the batter to the bowl, add suji, eno/fruit salt and mix it.
Then add chopped onions, chopped capsicum, grated carrot, chopped coriander and gently mix it.
Heat a flat pan, add oil, a pinch of sesame seeds and pour the batter over it.
Cover it with a lid and cook it on medium low flame for 1-2 mins.
Once the bottom side of the pancake gets crispy, flip and cook it from the other side.
Rice pancakes are ready to serve.

Healthy Banana Pancakes that are only a few ingredients, dairy-free and gluten-free too. They are so easy to make and absolutely delicious. I am sure you have been seeing me enjoy them on my stories so I wanted to make a recipe video for you all. I nailed this version out of the few I tried and personally liked it the most. This recipe makes 7 mini pancakes or one portion so feel free to double or triple it. You will need:
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 ripe banana
1 large egg
pinch of salt
dash of pure vanilla bean paste or vanilla extract
1/3 cup oat flour — see notes below
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Please note: If you don’t have oat flour you can simply add some rolled oats to a blender and blend until you get a flower like consistency. I did use rolled oats the other day and I personally like this texture way more as it’s definitely more fluffy and less mushy.

In a bowl mix the first four ingredients and make sure your banana is nice and mashed. Add the oat flour and incorporate until you have a thick batter. In a pan on medium heat add some cooking spray and let it heat up a bit. I made mini pancakes because the smaller they are the better they will cook. Cook them on each side for 2-3 minutes or until golden. Enjoy with any toppings you love and follow for more.
