How To make Orange Madeleines
3 Eggs
2 Egg yolks
2/3 c Sugar
1 tb Orange zest
1 ts Vanilla
2 tb Orange juice
1 c Flour
4 tb Butter; melted
Recipe by: Nancy Tarsi Preheat oven to 375 degrees. Grease and flour madeleine pans. With mixer in large bowl, beat together the eggs, yolks, sugar, orange zest, vanilla, and orange juice until pale yellow and almost tripled in volume (about 6 minutes). Sift flour over this mixture; fold in gently but thorougly; do not overwork or mixture will deflate. Fold about 1/4 cup batter into cooled butter and then fold back into cake mixture. Spoon batter into prepared pan, filling almost to the top. Bake madeleins until just barely golden around edges, about 7-10 minutes. Cool 1 minute and remove from pan with a small, sharp knife. Sift powdered sugar over warm madeleines. Refill pans and continue to bake until all batter has been used. It is not necessary to regrease and flour the pan. -----

INGREDIENTS:
For the madeleines:
• 4 eggs
• ⅔ cup sugar
• ¼ tsp salt (
• ½ tsp vanilla extract
• ¾ cup pastry flour (
• ¼ tsp baking powder
• ¼ cup cocoa powder (
• ¼ cup butter, melted
• 1 tbsp orange powder (
For the chocolate glaze:
• 8 oz white chocolate
• Christmas sprinkles
INSTRUCTIONS:
1. Preheat your oven to 375°F (190°C).
2. In a bowl, whisk together eggs, sugar, and salt until well combined. Add vanilla and whisk again.
3. Gradually whisk in the flour, cocoa, and baking powder. Then, gently fold in the melted, slightly cooled butter. Mix until just combined, being careful not to overmix.
4 .Stir in the orange powder. Spoon the batter into your buttered madeleine pan and bake for 8-10 minutes.
5 .Allow the madeleines to cool in the pan on a wire rack for a few minutes. Then, carefully remove them from the pan and let them cool further.
6. For the ganache, melt white chocolate in a double boiler over medium-low heat. Dip each madeleine halfway into the chocolate and place them back on the wire rack. Sprinkle with sprinkles.
7. Allow the chocolate to harden completely, and then you can enjoy your delicious treats!
8. Store your madeleines in an airtight container for 1-2 days.

Recipe:
3 large room temperature eggs
2/3 cups sugar
1 tbsp orange zest
1 tsp orange juice
1 Cup + 1 tsp All-purpose Flour
1 tsp baking powder
1/4 tsp salt
8 Tbsp melted butter
Tip: make it sure batter chilled for 1 hour or overnight before baking to get a perfect signature Madeleines hump. Bake it 7-8 minutes (Preheated Oven 350F)
Orange Madeleines with Orange Glaze
Hello everyone, it’s been a while since I uploaded a video on baking. A lot has happened in the meantime, as I now have a full time job and only having access to my oven on my twice-weekly days off. Here’s one of the easier recipes that I’ve done for my channel, the orange madeleine. Madeleines are fun to do because you can prepare the batter days in advance, then pipe out just as the craving comes. And you can glaze it with whatever kind of glaze you’d like, like orange, lemon, or even chocolate. One thing to pay attention is to make sure you have a good madeleine mold. Invest in the more expensive ones and try not to resort to using silicon madeleine mold because the baking will be uneven.
Yields: 18-20 madeleine pieces
5g Orange Zest
90g Egg
70g Sugar
20g Honey
2g Salt
75g Unsalted Butter, Melted
110g Cake Flour
4g Baking Powder
90g Confectioner Sugar
30g Orange Juice
