How To make Orange Walnut Madelines
1/2 c Sugar
2 Egg yolks
1/2 c Butter; melted and cooled
1 ts Orange peel; finely shredded
1 tb Orange juice
1/2 ts Vanilla
1/2 c All-purpose flour
1/2 ts Baking powder
1/4 ts Ground cardamon
1/8 ts Baking soda
1/8 ts Salt
1/4 c Walnuts; finely chopped
2 Egg whites; slightly beaten
Powdered sugar Grease and flour twenty-four 3-inch madeline mold. Set molds aside. (Look at a kitchen specialty store for a madeline pan with 8 or 12 shapes). Beat sugar and egg yolks in a medium mixing bowl with electric mixer on medium to high speed about 30 seconds or till thoroughly mixed. Add melted butter, orange peel, orange juice, and vanilla. Beat on low speed till combined. Sift together flour, baking powder, cardamon, baking soda, and salt. Sift or sprinkle about one-fourth of the flour mixture over the egg-yolk mixture. Gently fold in the flour mixture. Repeat, sifting and folding in one-fourth of the flour mixture at a time. Fold in nuts. Gently stir in egg whites. Spoon batter into prepared molds, filling each mold about half full. Bake in a 375~oven for 10 to 12 minutes or till edges are golden and tops spring back when lightly touched. Cool cakes in molds for 1 minute. Using the point of a knife, loosen cakes from mold; invert cakes onto a wire rack. Remove molds and cook cake completely on the rack. Tightly cover and store at room temperature up to 3 days. Just before serving, sift powdered sugar over tops. Makes 24. Source: BH&G Christmas Cookies 1995. -----

Super simple to make and delicious to eat.
INGREDIENTS:
200g of walnuts
200g of dried apricots
1 tsp of lavender
2 tsp of coconut oil
pinch of Himalayan or sea salt
Place the walnuts into the food processor, process into bread crumb shape.
Add in the rest of the ingredients, process until its is all mixed together.
Roll into balls and place into the fridge for 1 hour then dig in.

Egg 蛋 100g
Sugar 砂糖 60g
Brown sugar 黑糖 60g
Cream 淡奶油 20g
Coffee liqueur 咖啡酒 14g
Cake flour 低筋面粉 90g
Baking powder 泡打粉 4g (1 tsp)
Ground almond 杏仁粉 20g
Cinnamon powder 肉桂粉 1/8 tsp
Instant coffee powder 速溶咖啡 10g
Melted butter 溶化的奶油 120g
Bake at 190C for 10 -12 minutes

Ingredients
The Dry Ingredients:
3 cups (400g) all-purpose flour
2 tablespoons baking powder
zest of an orange
2 teaspoons ground cinnamon
1 cup (160g) ground walnuts
The Wet Ingredients:
1 and 1/3 cup (330ml) light olive oil
Flax egg: 4 tablespoons ground flax seeds plus 1/2 cup (125 ml) water
1 and 1/3 cup orange juice
1 cup (220g) granulated sugar
1/2 teaspoon baking soda
1 teaspoon pure vanilla extract
Garnish:
confectioner's sugar
Sweetened shredded coconut
Instructions
Preheat the oven to 350 °F, 180 °C.
Make the flax egg by combining the flax seeds and water in a small bowl. Set aside.
Combine the dry ingredients in a mixing bowl and whisk together. Zest the orange prior to juicing.
In a large mixing bowl, combine the oil, sugar, vanilla extract, flax egg, and whisk together.
Add the baking soda to the orange juice and mix. It will rise so, do this over the wet ingredients. Add to the bowl and whisk together.
Add the dry ingredients in a few batches and whisk until just combined.
If the batter is too thick, add a quarter cup of water.
Grease a 9 by 13-inch baking pan with olive oil and transfer the batter to the prepared pan.
Bake on the center rack for about 35 minutes or until springy to the touch. A toothpick inserted in the center of the cake should come out clean.
Cool completely and dust with confectioner's sugar.
Serve with Greek coffee. Kali Orexi!
Notes
A can (425g) of pure pumpkin puree can be used as an egg substitute in place of the flax-egg.
Store the cake in an air-tight container or covered tightly in plastic wrap so taht it does not become dry.
