How To make Oriental Meat Filled Pancakes
PANCAKES:
4 Eggs
1/2 c Water
3 tb Cornstarch
2 ts Soy sauce
1/2 ts Sugar
3 ts Peanut or Veg. oil, divided
MEAT FILLING:
6 Oriental pancakes
1 tb Cornstarch
3 tb Soy sauce
1 tb Dry sherry
3/4 lb Ground beef
1/2 lb Ground pork
2/3 c Chopped green onions & tops
1 ts Minced fresh ginger root
1 Garlic clove, pressed
Beat eggs in large bowl with wire whisk. Combine water, cornstarch, soy sauce and sugar, pour into eggs and beat well. Heat 8 inch omelet or crepe pan over medium heat. Brush bottom of pan with 1/2 teaspoon oil, reduce heat to low. Beat egg mixture, pour 1/4 cup of
egg mixture into skillet, lifting and tipping pan from side to side to form a thin round pancake. Cook about 1 to 1 1/2 minutes, or until firm. Carefully lift with spatula and transfer to a sheet of waxed paper. Continue procedure adding 1/2 teaspoon oil to pan for each pancake. Place wax paper between each pancake so they will not stick together. Makes 6 pancakes (24 appetizers) MEAT MIXTURE Prepare pancakes. Combine cornstarch, soy sauce and sherry in large bowl. Add raw beef, raw pork, green onions, ginger and garlic; mix until thoroughly combined. Spread 1/2 cup meat mixture evenly over each pancake, leaving about 1/2 inch border on one side. Starting with opposite side, roll up pancake jelly roll fashion. Place rolls, seam side down in single layer on heatproof plate; place plate on steamer rack. Set rack in large pot or wok of boiling water. Cover and steam 15 minutes. (For best results, steam all rolls at the same time) Just before serving, cut rolls diagonally into quarters. Chinese Stuffed Pancakes

This week, we're taking a trip to Chinatown and whipping up some incredible stuffed pancakes. Usually sold as a street food, these little beauties are delicious hot or cold, served with some sweet chilli sauce.

Chinese Stuffed Pancakes
Ingredients:
Pancake Dough
300g strong white bread flour
50g cornflour
1tsp fast acting yeast
1tsp salt
175 ml water
Meat Version:
350g minced beef
6 spring onions
1 red pepper
1 clove of garlic
1.5tsp salt
1tbsp sesame oil
1tbsp sugar
1” ginger and 1 chilli
Veggie version:
350g fresh mushrooms
20g dried mushrooms (optional)
1/4 savoy cabbage
1 carrot
1 red pepper
1 clove garlic
1tbsp sesame oil
1tbsp sugar
1” ginger and 1 chilli
Dipping Sauce
Sesame oil
Sweet chilli sauce
Honey
Method:
Meat Version
Slice garlic and chilli and cut ginger into batons. Dice red pepper and slice spring onions.
Fry beef in a frying pan and once all the moisture is removed add chilli, ginger and garlic, sweat until fragrant. Add diced pepper, season then add sugar and sesame oil and cook for 3 minutes. Place in a container and chill.
Veggie version
If you are using dry mushrooms, place in a bowl and pour 100mls boiling water over and leave to rehydrate for 15 minutes. Slice garlic and chilli and cut ginger into batons. Dice red pepper, carrot and cabbage. Slice all of mushrooms thinly, retaining the liquid from the dried mushrooms if using.
Add a tablespoon of oil in a frying pan and once warm add garlic, chilli and ginger and cook until fragrant. Add red pepper, carrots, fresh and dried mushrooms and cabbage and fry for 3 minutes. If using dried mushrooms, add the liquid from this now and bring to a boil to reduce all the liquid. Place in a container and chill.
Pancake Dough
Sieve flours into a bowl, add salt and yeast (keep separate). Add the lukewarm water and knead until smooth. Add more water if needed to bring the dough together. Leave covered to rest for 15 minutes.
Roll the dough into a sausage shape and cut into 12 equal pieces. With a rolling pin, roll each piece into a circle about 2mm thick. Place 1tbls mix into the centre and gather the dough at the top and press together to seal, gently flatten with the palm of your hand.
Put your oven on at 180'c, gas mark 4. Put 2tbls oil into a frying pan and fry on both sides until golden. Place in the oven for 10 minutes and then serve.
