How To make Pastitso Makaronia Me Feta
Karen Mintzias 1 lb Macaroni; cooked & drained
8 tb Butter or margarine; melted
3 Eggs; lightly beaten
1/2 c Grated cheese
1 1/2 c Feta cheese, cubed
Salt White pepper 1 ts Nutmeg, grated
12 Sheets commercial filo
- cut to fit pan, - covered to avoid drying In a large bowl, combine the macaroni, one-third of the melted butter, the eggs, grated cheese, and feta. Season with salt, white pepper, and nutmeg and mix with a wooden spoon. In a buttered 9 x 12 x 3-inch baking pan, spread the macaroni-cheese mixture over the filo and cover with the 6 remaining sheets of filo, brushing butter between each and on the surface. Using the tip of a sharp knife, score the top 3 to 4 sheets to indicate 12 servings. Bake in a moderate oven (350 F) for 30 minutes, or until the surface is crisp. Ingredients:
Preparing the Pasta:
- Pasta 500g
- Salt 1/2tbs
- Boiling water
- 2 egg whites
- Crumbled Feta Cheese 100g
Preparing the Mince Sauce:
- Olive Oil 2tbs
- 4 cloves of Chopped Garlic
- 2 Chopped Onions
- 1kg Mince Beef
- Red Wine 100ml
- 2 cans of Chopped Tomatoes (400g each)
- Brown Sugar 1/2tbs
- Ground Cloves 1/4tsp
- 1 Bay Leaf and Cinnamon Stick
- Salt 2tsp
- Ground Pepper 1/2tsp
- Chilli Flakes 1/2tsp
- Mixed Herbs 1/2tsp
Preparing the Béchamel Sauce:
- Unsalted Butter 100g
- Flour 100g
- Fresh Milk 900ml
- Grated Cheese 100g
- Ground Nutmeg 1g
- Salt 1tsp
- 2 Egg Yolk
Assembling the Layers:
- Cooking Spray or Olive Oil
- Grated Cheese
- Ground Cinnamon
*If you can’t find this Pastitcio pasta, you can use Penne Pasta as an alternative!

“Makaronia me Kima” (Greek spaghetti with meat sauce) is one of my favorite comfort foods. This incredibly popular recipe is the Greek version of spaghetti Bolognese, a rich ground beef and tomato sauce served over pasta.

You will need
Butter
Onion and garlic
Peeled plum tomatoes (canned San Marzano tomatoes) or grated fresh tomatoes
Salt, pepper, sugar, bay leaves, cinnamon stick, allspice berries and ground cloves
White wine plus vegetable stock (bouillon powder or a stock cube)
Ground beef
Olive oil

You will need the following...
Pasta:
- 500g (18 oz) penne or other pasta
- 4 Tablespoons butter
- ¾ Cup grated parmesan cheese
- ½ Teaspoon ground nutmeg
- Salt & pepper to taste
- 3 eggs
Meat:
- 1 large brown onion
- 2 garlic cloves
- 2 Tablespoons butter or olive oil
- 1kg (2.2 lb) beef mince
- 140g (5 oz) tomato paste
- 1 Teaspoon ground cinnamon
- ½ Cup red wine
- ½ Cup water
- ½ bunch parsley
- Salt & pepper to taste
Cream sauce:
- 2/3 Cup butter
- ¾ Cup plain flour
- 1L (32 fl oz) milk
- ½ Teaspoon ground nutmeg
- 2 eggs
- Salt & pepper to taste
