AMISH CHICKEN SPAGHETTI CASSEROLE--Shelf Stable Pantry Collaboration
Welcome back to the Shelf Stable Pantry Collaboration (always the 1st Tuesday of the month)! Another great casserole shared to me by the Amish, and if anyone knows how to feed a passle of people cheap and quick, it's them! This is super easy and satisfying! Perfect cold weather comfort food!
Amish Chicken Spaghetti Casserole
2 large cans of chicken
½ cup butter
6 T flour
2 cans evaporated milk
½ pound melting cheese, such as Velveeta
1 can cream of mushroom soup
10 oz spaghetti, cooked and drained
½ tsp salt, or to taste
¼ tsp black pepper
½ tsp paprika
½ breadcrumbs
Instructions
In a sauce pan, melt butter, whisk in flour, add milk, and bring to a boil,
stirring constantly.
Simmer a few minutes then add cheeses and mushroom
soup.
Add canned chicken with juice.
Now mix together sauce mixture, spaghetti, salt, pepper and paprika.
Sprinkle top with bread crumbs or crushed potato chips or crushed corn flakes.
Bake at 350 for 30 minutes.

So here ya go.
Ingredients:
4 cups cooked rice
2 cup salsa
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon dried oregano
1 can roasted peppers
1 small diced white or yellow onion or 1/2 onion and 1 green pepper
1 can corn (drained)
1 can black beans (drained/rinsed)
2 cups cooked chicken (chunk or shredded, your choice)
2 cups chicken stock
2 cups shredded cheese
2 cups tortilla chips in large pieces
Heat oven to 350 degrees.
Prepare a 9×13 baking dish and spray with cooking spray. Set aside.
Cook rice but cook al dente because it will cook more in the oven
In large bowl, combine rice, salsa, and spices
Now add in the roasted peppers, diced onion, corn, black beans, chicken, and 1 cup of the shredded cheese. Stir together to combine.
Fold in 1 cup of the tortilla chips and stir lightly to combine, trying not to break chips up to much.
Pour the mixture into the prepared baking dish and add chicken stock, cover with foil and cook for 30-35 minutes.
Now sprinkle the remaining cheese on top and crush up the remaining chips and sprinkle over the casserole.
With the tin foil off let cook an additional 10-15 minutes but watch closely so chips/cheese don’t burn.
Serve and top with additional sour cream, guacamole, salsa or whatever you like.

CHICKEN NOODLE CASSEROLE -- MAKE IT EASY MONDAY CROCK POT DINNER
Let the crock pot/slow cooker be your friend and make you the hero with this creamy yummy chicken noodle casserole! Cheap, easy, and can feed an army!
CHICKEN NOODLE CASSEROLE
2-3 lbs of chicken
4 C chicken broth/stock
4 C water
1 tbs Italian seasoning
1 C sour cream
1/2 brick of cream cheese
1 C shredded cheddar cheese
3/4 lb. spaghetti
1 C crushed potato chips
Put chicken, stock, water and Italian seasoning in crock pot.
Cook on high for 4 hrs if faster time desired, 8 on slow for longer.
Debone chicken and shred.
Add sour cream, cream cheese, and spaghetti.
Cover and cook another half hr or until noodles are done.
Add cheese and potato chips, cover and cook another 5 minutes or until cheese is melted.
Serve!

CHICKEN POT PIE RECIPE VIDEO // TASTY TUESDAY
RECIPE!
Dough:
2.5 cups flour
3/4 cup milk
2 eggs
Directions:
Start by adding the flour to a bowl
Create a well in the dough
Add one egg and half the milk
Mix well
Add second egg and slowly add milk until the dough gets to desired consistency
Roll out dough 1/4 inch thin
Slice into squares
Allow to sit out in the air to dry out
Pot pie:
3 large potatoes
2 chicken breasts
Celery
Onion
2-3 tbsp dried parsley
Water
Directions:
Add chicken breast, celery, onion, salt, and pepper to a pot and cover with water.
Boil until chicken is cooked.
Peal and cut potatoes.
Remove chicken and shred.
Remove veggies and discard.
Start layering in the ingredients: start with potatoes, then dough, then parsley, salt, pepper, then more potatoes and more dough, top with shredded chicken.
Bring to a boil until potatoes are tender. Dough will float to the top when done.
