How To make Pfannkuchen Or German Pancakes
1 Pancake - 2 servings
Combine and stir until -smooth: 4 Beaten egg yolks
2 tb Cornstarch
1/4 c Lukewarm milk
1/4 c Lukewarm water
3/4 ts Salt
1 tb Sugar
Grated rind of one lemon Beat until very stiff: 4 To 5 egg whites
Fold them into the yolk -mixture. Melt in a heavy -10-inch Skillet: 2 tb Butter
When the skillet is hot, -pour in the pancake batter. -Cook It over a medium heat, -partly covered with a lid, -for about 5 Minutes. Or the batter may
-be cooked until it begins -to set and then be placed briefly in a preheated 400 degree oven until it is puffed and firm. Cooking time in all is about 7 minutes. It should puff up well, but it may fall, so serve it at once with: Confectioner's sugar and cinnamon or lemon juice; covered with jam or jelly and rolled; or with wine, fruit, or rum sauce. The main SECRET of Perfect French Pancakes is to mix all the ingredients correctly!
Hey there, today I've got a fantastic old-school recipe for French pancakes that's sure to impress. Start by combining 8 ounces (225 grams) of all-purpose flour, 3 tablespoons of sugar, and a pinch of salt in a bowl. Make a little well in the mix, then crack in 3 eggs.
Now comes the secret: slowly add 17 fluid ounces (500 ml) of warm milk, whisking gently as you go. It's crucial to pour the milk gradually to avoid any lumps in the batter. Once half the milk's in, whisk it all together, then pour in the rest.
Next, melt 3 tablespoons of butter and add that to the batter along with a hint of vanilla. Keep whisking until everything's smooth.
When your batter's lump-free and beautiful, heat up the skillet and pour in just enough to make a thin pancake. Once it's matte on one side, flip it for another 30 seconds or so.
These pancakes are incredible for stuffing with all sorts of goodness—meat, cheese, you name it!
