How To make Pickled Tongue
*Ingredients* 1 Beef Tongue NOTE!!
PICKLED TONGUE This is a favorite dish of my family's, especially on holidays like Easter and Christmas. Most people cringe at the idea of eating a cow's tongue, but actually the meat is very tender, and even if you have to close your eyes and plug your nose to try it, please do. I guarantee it won't be what you expect! 3C. Red Wine Vinegar Make sure to use glass 1 2 Bulbs
Garlic bowls and pans when cooking 1 1/2C. Virgin Olive Oil the tongue, as metal will 1/4C. Parsley (dried or fresh) change the flavor of the 3/4T. Sweet Basil meat, leaving it tasting 1/2T. Rosemary metallic. Salt and Pepper to taste *Directions* 1. Place tongue in glass saucepan with enough water to cover it.
2. Bring water to boil slowly over a medium heat and continue boiling for
approx. 45 min.- hour. 3. While the tongue is boiling, prepare the marinade in a glass bowl.
4. In bowl, combine the olive oil and red wine vinegar. Use a garlic press
to crush the cloves, or you can crush them with the flat side of a knife. rest of the herbs and spices. 6. When the tongue has cooled enough to handle, peel by slicing thinly with
a sharp paring knife, removing all the taste buds and the fat at the base of the tongue. Then proceed in slicing the tongue widthwise. lid, and layer with the marinade. 8. Put the mixture in the fridge with the lid on and allow it to remain
there, unopened for at least 4 days. 9. When you are ready to serve the tongue, remove it from the fridge an
hour before, as this dish is best at room temp.

Start with one whole whitetail heart or 1/2 a moose heart
cleaned up and sliced into bite size pieces. Add some herbs
and let set in the frig for a few hours.
In a sauce pan put enough water to cover the pieces of meat
and add 1/2 tsp. salt, 1/2 tsp. pepper, 1/2 tsp. garlic powder,
and 1/2 tsp. onion powder.
Bring meat and spices to a boil then reduce it to a simmer
for 3 minutes and set the meat aside.
Sterilize your jars... Fill your jars with the meat and sweet onions.
(A layer of onions, then a layer of meat up to 1 inch from the top.)
I always like to make the top layer onions.
Make a separate brine with 4 cups vinegar and 3 cups sugar, with
1 tbsp. pickling spice and a splash of wine. Bring to a boil then simmer for 3 to 5 minutes or until sugar is dissolved.
Let it cool somewhat but pour the brine over the meat and onions while it is still a little bit hot. Snug the lids down and turn the jars
upside down and store in the refrigerator for 7 days.
After 7 days.... Serve with Ritz Crackers!

Pickled Beef Heart
We are up in New hamburg and stop at Cloverleaf food outlet and picked up some pickled Beef Heart and give it a try.

Pickled Tongue
Serves 6 -- 8
1 -- 1,5kg whole beef tongue
1 tsp peppercorns
2 Bay leaves
¼ cup sugar
3 Tbs Himalayan Pink salt
5 whole cloves
¼ cup white wine vinegar
2 cups water
1. Place the peppercorns, bay leaves, sugar, salt, cloves, vinegar and 2 cups water into a pot.
2. Heat gently and stir until the sugar dissolves.
3. Leave to cool completely.
4. Place the tongue into the brine and refrigerate for at least 24 hours or up to 3 days.
5. Place the brine and tongue into a pot and cover with water.
6. Bring to the boil and cook for 30 minutes per 100g. Keep topping up with water during cooking.
7. Remove from the liquid and peel the outside layer off the tongue.
8. Place into a tray with some cans on top to weigh it down and place into the fridge for 1 day to press until compact.
9. Slice thinly to serve.
