How To make Pigeon Forge Pintos
2 lb Pinto beans
2 qt Water
1/2 lb Salt pork
2 ts Salt
1 c Molasses
1 t Dry mustard
2 tb Brown sugar
Wash beans,discarding imperfect ones. Cover with water; bring to the boiling point, boil 2 minutes, then soak 1 hour or more. Without draining, cook slowly until the skins burstwhen you take of few on a spoon and blow on them. lDrain, reserving the cooking water. cover salt pork with boiling water. Let stand 2 minutes, drain, and cut 1-inch gashes every 1/2 inch without cutting through the rind. Put the beans in the bean pot. Push the pork down into the beans until all but the rind is covered. Mix remaining ingredients. Add 1 cup of the reserved water and bring to the boiling point. Pour over the beans and add enough more water to cover the beans. Cover the bean pot. Bake 6 to 8 hours at 250F. Add water as needed to keep the beans moist. Uncover the last hour of baking so that the rind will be brown and crisp. Recipe By : The Little Mountain Bean Bible Cookbook

We're heading out towards Bush's Best Family Café in Chestnut Hill, TN for another restaurant review for you.
Never eating here we don't really know what to expect. We have heard good things about the food from several people. Going in, we know to expect down-home country cooking like Grandma did.
Bush's Best Family Café is an easy 30 min drive from Pigeon Forge. It's located right outside of Dandridge, TN in Chestnut Hill. They have a general store and museum on the grounds as well. Everything closes at 4pm. So when we were done eating it was all closed.
Bush's Best Family Café is worth the drive out. Take a break from the tourist traffic and food pricing and visit this eatery.

THIS WEEK'S RECIPES:
COPYCAT WENDY'S CHILI:
*We added garlic and chili pepper to ours.
CORNBREAD RECIPE VIDEO:
CHICKEN TOT PIE:
*SUBBIE SUPPER* From Sydney and Hannah
SAUSAGE PENNE
1 pound Italian sausage (you can use pork and turkey, sweet and spicy, any kind works!)
3 tbsp. olive oil
1/2 cup chopped onion
2 cups sweet peppers in strips
1 lb penne pasta
1 cup chicken stock
3 cup broccoli (can use fresh or frozen, but fresh is best)
2/3 cup half and half
1/2 cup parmesan
2 tbsp parsley
1. Brown sausage (drain if needed) then add onion and peppers 3 to 4 min
2. Add chicken stock bring to a simmer and reduce heat to low simmer
3. Cook pasta in salty water - in the last 3-4 min add broccoli and boil until done
4. Drain pasta and broccoli, add it to the sausage mixture, add cheese half & half and serve!
