How To make Polish Cheesecake
CRUST:
1 x Shortbread; See Recipe # 23
CHEESECAKE:
4 c Dry Curd Cheese; 2 lbs, * 1/2 ts Salt
1 1/2 c Sugar; Granulated 4 ea Eggs; Large, Lightly
Beaten 1/2 c Butter; Melted 1 ts Vanilla Extract
CRUMB TOPPING:
1 c Unbleached Flour 1/2 c Confectioners' Sugar
1/2 ts Cinnamon; Ground 1/4 c Brown Sugar; Packed
1/4 c Butter; Melted 1 tb Unbleached Flour
* Use either Dry Curd Cottage or Farmer cheese in this recipe. ~ Preheat the oven to 350 degrees F. Place the cottage cheese in a sieve and drain. In a small bowl, mix the flour, salt, and sugar. Set aside. In a large bowl, combine the cottage cheese with the eggs, butter, and vanilla. Mix until well blended and smooth. Add the dry mixture and blend well. Pour the mixture into the prepared crust and set the cake aside. Prepare the topping by sifting the flour, sugar, and cinnamon together. Add the brown sugar and blend well. Pour the melted butter over the topping mix and immediately stir with a fork to form small crumbs. Sprinkle the topping mix over the surface of the cake and bake the cake for 50 minutes, or until done. Cool to room temperature and then chill. :

Sernik is an authentic Polish cheesecake, that is traditionally prepared with a farmer's cheese called twarog.
Prep Time: 30 mins
Cook Time: 1 hr 30 mins
Total Time: 2 hrs
Ingredients
For the sernik
❒ 1½ lb twarog (Polish farmer's cheese, recipe below), or farmer's cheese or ricotta cheese
❒ 5 eggs
❒ 4 tablespoons flour
❒ 1 cup sugar
❒ 4 tablespoons unsalted butter
❒ ½ cup raisins
❒ ½ cup slivered almonds
❒ 1 tablespoon vanilla extract
❒ Zest of ½ orange
❒ Juice of a lemon
For the twarog (Polish farmer's cheese)
❒ 1½ gallon whole milk
❒ Juice of 8 lemons
❒ 4 teaspoons salt
Instructions
Sernik
❒ In a large bowl, mix the cheese with the sugar and eggs.
❒ Soak the raisins in warm water for 10 minutes. Drain and coat the raisins with flour. Add the raisins, flour, almonds, orange zest, lemon juice and vanilla to the mixture.
❒ Add the melted butter. Whisk well.
❒ Spread the mixture evenly into a greased springform pan.
❒ Bake the sernik in an oven preheated at 300 F (150˚C) for one hour (depending on the oven, add 10 to 15 minutes of baking if sernik is not fully cooked).
❒ Wait 10 minutes before unmolding. Enjoy the sernik at room temperature or after chilling in the refrigerator for an hour so it is a little firmer and easier to cut.
Twarog
❒ Pour the milk into a large pot. Add salt and simmer over medium heat. Once the milk starts to simmer and small bubbles appear on the sides, turn off the heat.
❒ Add the lemon juice. Stir slightly. Cover the pot and wait thirty minutes for the milk to curdle.
❒ Strain the milk through a clean white cloth or cheesecloth.
❒ The solids remaining in the cloth is the cheese. Press the cloth firmly to obtain a dense cheese. The liquid is called whey and can also be saved and used as a drink.
❒ The cheese used for the sernik needs not be flavored. However, if the cheese is used for other ❒ purposes, feel free to add herbs, spices, oil or nuts.

Ingredients:
1 kg mascarpone cheese
8 eggs
3/4 cup sugar
2 tbs corn starch/vanilla pudding powder
2 tsp vanilla extract
1/4 cup of Chocolate chips
Instructions:
Separate the eggs. Beat the egg whites until stiff picks. Beat the egg yolks with sugar and vanilla until they turn light yellow and creamy.
Add the cheese few spoons at the time.
Spray your spring baking pan with a non stick spray or line it with a parchment paper.
Gently fold in the egg whites into the cheese mixture and pour into your baking pan.
Bake in preheated oven to 170 degree Celsius for 75 min. Turn off the oven and leave the cake in for another 60 min with a oven door slightly open.
When the cake is cooled completely remove it from the pan and drizzle with melted chocolate.
