Poor Man's Shrimp and Grits
Here's the recipe:
Poor Man's Shrimp and Grits
In sauce pan bring 2 cups of water to a rolling boil
add 1/2 - 1 teaspoon salt
Add 1/2 cup stone ground grits (white grits)
Cook on very low heat for about 30 minutes adding a little more water as necessary to have a creamy consistency and stirring occasionally.
In a skillet heat:
2 - 3 tablespoons of oil
Add 1 tablespoon butter
Coat 2 cups of medium shrimp (peeled and deveined) with flour
Add to oil in skillet
sprinkle with:
garlic powder
onion powder
1 teaspoon of Old Bay Seasoning
Sprinkle a little more flour over the shrimp and cook on medium low until flour is slightly browned. Add 1 cup of water for thinner gravy or 3/4 cup for thicker gravy.
Add 1/4 cooking sherry for added flavor or a little lemon juice
Serve over grits.
Makes 4 servings

Shrimp Burger Style Shrimp Po' boy Sandwich - PoorMansGourmet
If you love shrimp and you've been craving big bites of it, through and through, this Shrimp Burger Recipe is for you. I show you how to make shrimp patties that have about a 1/2 pound of meat, in each one, and are 3/4 of an inch thick, once they're cooked. I show you how to make two different styles of shrimp burgers, too; regular and/or extra crispy. The regular Shrimp burger is my wife's favorite because it has more of a grilled chicken style texture to the shrimp patty but I like the extra crispy because it's got a pan fried, seasoned panko crust, just like fried shrimp should have. I had just a few other simple ingredients to the burger, including a few condiments you may or may not want to add but, I'm telling you, you should give this a try before you change up anything.

Poor Man's Lobster
I love fish- especially crab and lobster but it's so dang expensive! But here's an easy trick to turn a piece of white fish, like cod or halibut, into a 5 star dining experience. We think you'll enjoy this quick and easy fish recipe.
Poor Man's Lobster
Cod or Halibut filets, thawed if frozen
1/2 Lemon
1 cup sugar
lemon pepper, dill seed, melted butter (for serving)
1. Fill a large pot about 1/2 to 3/4 full of water and bring to a boil.
2. Add in half a lemon, cut into 2 pieces and the sugar. Stir until the sugar dissolves.
Allow the mixture to come back to a boil for a couple minutes.
3. Cut the fish into about 1-inch chunks and add to the boiling water. Do not stir!
4. When the fish begin bobbing and float to the top, strain them out and set on a paper towel or wire rack.
5. Sprinkle with lemon, lemon pepper and/or dill seed (optional). Dip in butter- serve warm.
